GREAT-GRANDMA'S ITALIAN MEATBALLS
My great-grandmother started this easy meatball recipe with our family. We use ground beef and turkey for these meatballs, and the flavor's so good, you won't miss the extra calories. -Audrey Colantino, Winchester, Massachusetts

- Preheat oven to 375°. In a small skillet, heat oil over medium-high heat. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Cool slightly., In a large bowl, combine bread crumbs, cheese, eggs, seasonings and onion mixture. Add turkey and beef; mix lightly but thoroughly. Shape into 1-1/2-in. balls., Place meatballs on a rack coated with cooking spray in a 15x10x1-in. baking pan. Bake until lightly browned and cooked through, 18-22 minutes. If desired, serve with pasta and pasta sauce.

- 1. Meat balls..... In a Large bowl, add all ingredients together MINUS the flour. Start cooking your bacon, on a stove top, med. heat untill bacon is crispy, save grease, you will need this to cook your meatballs in. **I use my hands to mix the ingredients evenly,and roll into balls, the size of golf balls, and roll in flour. ** Add to bacon grease and cook till brown on all sides.
- 2. While cooking meatballs, start your sauce. In a large boiling pan, bring All ingredients together, adding cooked bacon as well **chop up bacon into chunks** and add to the sauce. Simmer on low-med for about 45 to an hour, stirring continuously.Add meatballs to sauce once all browned. the meatballs with soak in all the juices.
- 3. Boil 16-18oz of spaghetti noodles. follow package directions. drain noodles once done,plate and serve. I hope you will find my grandmother Anderson's Spaghetti and meatballs your new favorite spaghetti from here on out. ** Double the sauce if you like more sauce than meatballs**, Always better to have more sauce than not enough, incase you really love it. My kids LOVE this recipe, they wont eat any other kind of spaghetti, When I made this for the first time for my husband, I was so neverous, but, he took one bite, and got up from the table and came over and gave me a big kiss, and said, " it is different, but i like it, it kinda taste's like a sweet BBQ sauce" and he's been hooked ever since. - Mix all ingredients thoroughly in large bowl. If mixture seems a little loose add more bread crumbs.

I found this recipe on the Food Network website on Throwdown with Bobby Flay. It is from Maroni Cuisine in Northport, New York. I saw the episode and was inspired to make the meatballs. Boy am I glad I did. They are so good! - For the meatballs:.
- Preheat oven to 350°F Spray a baking sheet with olive oil cooking spray.
- Mix chuck, bread crumbs, eggs, milk, Romano, onion, garlic, parsley and basil thoroughly in large bowl. If mixture seems a little loose add more bread crumbs.
- Roll meatballs loosely about the size of a golf ball and place on baking sheet. Place into preheated oven for approximately 35 to 40 minutes.
- To make the sauce:.
- In a medium saucepan over medium heat, add oil. Once heated add the finely sliced garlic and onions to the pan. Cook over medium heat until soft and slightly brown. Next add the canned crushed tomatoes, salt and pepper and stir. Allow the sauce to come to a simmer and cook for 20 minutes. Remove from the heat and add the julienned basil.
- Simmer meatballs in sauce for about 10 minutes, and then serve over al dente pasta. YUM!

- Preheat oven to 350˚. Chop bread into very small pieces or use a food processor or blender to make them into breadcrumbs.
- In a large bowl combine ground beef, black pepper, bread crumbs, egg, bell pepper, 2 tablespoons of the parsley, garlic powder, Italian seasoning, and olive oil. Using your clean hands to mix will work best here.
- Form into 20 equal meatballs using a small scoop or you hands. Place in single layer on rimmed baking sheet.

- Heat olive oil in a very large pot or dutch oven. Saute onion for about 5 minutes and until soft. Add garlic and saute an additional 2-3 minutes.
- Add tomato juice, tomato paste, water, salt, pepper, sugar, basil and oregano. Simmer 3 hours with loose lid and stir occasionally.
- While sauce is simmering; combine all meatball ingredients in a large bowl. I used my hands to thoroughly combine ingredients together.
- Roll meat mixture into meatballs and pan fry in a large skillet with olive oil. You will most likely have to do this in several batches, depending on the size of your skillet. You will not want meatballs to be completely cooked, just browned around the outside.
