GRANDMA'S HAMBURGER HELPER
This is my go to recipe when I don't want to cook. I learned it from my Grandmother who used it in similar situations!

Steps:
- Saute onion and celery in water or chicken stock, set aside.
- Brown the ground beef, drain.
- Add onion and celery back in.
- Add can of diced tomatoes, a can of water and the pasta.
- Bring to boil, simmer uuntil pasta is soft and water is gone.
- Mix in onion soup mix.
- Mix in cheddar cheese.
- Serve.

Mom used to make these to stretch the budget. Now I fix them because they are tasty and my family asks for them. Dad asks that we make extras so he can make sandwiches the next day.

- Combine ground beef with remaining ingredients.
- Mix well.
- Shape into 6 patties or 3 larger steaks.
- Broil 4 to 5 inches from heat for 10 minutes, turning once.
- These burgers can also be pan grilled.

Steps:
- Mix the ground beef, egg, herbs, salt and freshly ground black pepper and soy sauce together in a large bowl.
- Sauté the onion in the butter until golden.
- Stir into the ground beef mixture.
- Add enough breadcrumbs to hold the mix together.
- Shape into flattened patties and broil or barbecue until cooked through (roughly 5 minutes each side).
- Serve on a seeded bun with crisp lettuce, fresh tomato and mayonnaise.

Steps:
- From the package VERY gently form into 8 burgers. Do not over press, squeeze or mix the meat in anyway. Save that for meatloaf.
- Sprinkle with salt and pepper.
- Grill over high heat covered, I use charcoal,for 4 to 6 min per side depending on your preference, flipping at the halfway point. Add cheese at the flip if you wish. Serve on toasted buns with ketchup, mustard, mayo, etc. I like mine plain.

SAUSAGE (MY GRANDPA'S HOMEMADE)
My Grandpa used to make lots of goodies every year around Christmas. His sausage was probably one of my favorites. We would snack on it all day long with crackers and cheeses. Please keep in mind it's written on an old post card and it's not very descriptive, (he passed away in 2000 and I was never able to ask him about his recipes) so I did my best. If you ever try to make this and find a better way, please offer me suggestions. I have not made this yet, almost in fear of it not tasting as good as it did when I was little. I am thinking about making it this Christmas. If I do and I find the need to edit some things I'll do so as soon as possible.
