EASY CHILI

This delicious recipe is a snap to make and tastes delicious! It's vegan and vegetarian, but for those who like cheese, you can serve it topped with cheese, with crackers on the side.

Easy Chili image

Steps:

  • In a large saucepan saute onion, garlic, celery and olive oil until onions are soft.
  • Add to saucepan textured vegetable protein, chili beans, tomatoes, water, sugar, salt and pepper, and chili powder. Stir occasionally, let simmer for 30 minutes. The textured vegetable protein will expand when added to liquid.

5 cloves crushed garlic
1 stalk celery, chopped
1 tablespoon olive oil
8 ounces textured vegetable protein
4 (16 ounce) cans chili beans

GRANNY'S CHILI (WITH NOODLES)

This is the chili recipe that I grew up with that was passed down from my Granny, to my mom, to me! I absolutely adore it, even if it's not a purist's idea of chili. Yes, there is canned Chili in the recipe, but it's still delicious and super easy. It makes plenty to freeze and reheat whenever you don't feel like making dinner!

Granny's Chili (With Noodles) image

Steps:

  • In a large pot or dutch oven, cook ground chuck. Then, saute onion in the fat.
  • In a separate pot, boil macaroni according to instructions on box.
  • Once the onion and ground chuck are cooked, add the cans of Varallo chili, tomato juice, spices, and water. (Here's a tip, just fill both cans 2/3rds of the way up with water -- that should be plenty)
  • After the macaroni is cooked, dump in into the big pot with the chili and simmer and reduce for around 30 minutes.
  • Enjoy!

Steps:

  • In a large saucepan over medium heat, combine the beef and onion and saute until meat is browned and onion is tender. Add the stewed tomatoes with juice, tomato sauce, beans and water.
  • Season with the chili powder, garlic powder, salt and ground black pepper to taste. Bring to a boil, reduce heat to low, cover and let simmer for 15 minutes.
