Steps:

  • In a large bowl, whisk together the sugars, salt, and butter until a paste forms with no lumps.
  • Whisk in the egg and vanilla, beating until light ribbons fall off the whisk and remain for a short while before dissolving back into the mixture.
  • Sift in the flour and baking soda, then fold with a spatula to combine. (Be careful not to overmix, as the gluten in the flour to toughen resulting in cakier cookies.)
  • Fold in the chocolate chips.
  • Chill the dough for at least 30 minutes or, for a more intense, toffee-like flavor and deeper color, chill overnight. The longer the dough rests, the more complex its flavor will be.
  • Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • Scoop the dough with an ice-cream scoop onto the prepared baking sheet, leaving at least 4 inches (10 centimeters) of space between cookies and 2 inches (5 centimeters) of space from the edges of the pan so that the cookies can spread evenly.
  • Bake for 12-15 minutes, or until the edges have started to barely brown. Top each cookie with a pinch of sea salt as soon as they come out of the oven, then let cool completely.
  • Serve with a glass of milk.
  • Enjoy!

GRANT'S CHOCOLATE CHIP COOKIES

This recipe came from the Rachael Ray Show that aired on May 21,2014. These are not your run of the mill chocolate chip cookies. The balance of sweet and salty give them a unique flavor. To me, the taste is worth the extra effort.

Steps:

  • Preheat oven to 350 degrees. In a food processor, process oats until they become a very coarse flour.
  • In a bowl, whisk together processed oats, flour, baking soda, baking powder and salt.
  • In another bowl, mix together brown sugar and granulated sugar. Mix it with your hands (or a spoon) until the mixture becomes a light, fluffy mix.
  • In the bowl of a stand mixer, beat butter and sugars on MED-HIGH until light and fluffy., 6 minutes. Reduce speed to LOW, add the eggs and gradually increase the speed until you're on the highest setting. Reduce the speed back to LOW and add vanilla. Add in dry ingredients 1/4 cup at a time in 1 minute intervals. Once all of the dry ingredients are added, beat for a minute or two just to make sure the ingredients are very well-mixed. Turn off the mixer and remove the bowl from the stand mixer.
  • Add in the chocolate chips and mix by hand to incorporate.
  • Scoop cookie dough onto a parchment-lined sheet tray using the medium sized scoop. Bake for 6 minutes, rotate the cookie sheet and bake for another 6 minutes or until golden brown on top but still slightly soft in the middle. Remove the trays from the oven on to cooling racks, do not remove cookies from tray. Sprinkle with a little extra salt and let cool on trays for 15-20 minutes before removing cookies from tray.
  • ****Please note that cooking times may vary depending on your oven. When I made these, I needed to add 1-2 minutes extra baking time.

1 1/2 cup(s) old fashioned oats
3 cup(s) all-purpose flour
1 1/2 teaspoon(s) baking soda
1 1/2 teaspoon(s) baking powder
1 teaspoon(s) kosher salt (plus more for finishing)
1 1/4 cup(s) ( 2 1/2 sticks) unsalted butter, room temperature
1 1/2 cup(s) packed light-brown sugar
1 cup(s) granulated sugar
2 large eggs
1 teaspoon(s) vanilla extract
2 1/2 cup(s) ( 1 small pkg.) semi-sweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Arrange three racks evenly spaced in the oven (see Cook's Note).
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter on medium speed for 3 minutes, until creamy. Add the granulated sugar and brown sugar and beat on medium speed for 2 to 3 minutes, until light and fluffy. Scrape down the bowl with a rubber spatula. Add the egg, vanilla, and 2 tablespoons of warm water and mix on low speed just to combine. In a medium bowl, whisk together the flour, baking soda, and kosher salt. With the mixer on low, slowly add the flour mixture, then the chocolate (including the fine chocolate dust) to the batter until combined. Mix well with a rubber spatula.
  • With a 2 1/4-inch standard ice cream scoop (or 1/3 cup measure), make 12 rounded scoops of dough and place them on a sheet pan. Freeze the dough for exactly 15 minutes, then arrange 4 balls of dough--spaced wide apart--on each of three sheet pans lined with parchment paper. Bake for 10 minutes, until the cookies are slightly puffed in the center. Remove the pans from the oven and bang them on the stove top, until the center of the cookies deflate. Bake for 3 minutes, then bang the pans again, repeating baking and banging every 3 minutes, for 18 to 20 minutes total, until the edges of the cookies are golden brown. (The centers will be lighter and not fully cooked.) Rotate the sheet pans in the oven so the cookies bake evenly. Sprinkle the cookies with fleur de sel and cool completely on the pans.

1/2 pound (2 sticks) unsalted butter, at room temperature
1 1/2 cups granulated sugar
1/4 cup light brown sugar, lightly packed
1 extra-large egg, at room temperature
1 1/2 teaspoons pure vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon kosher salt
8 ounces bittersweet chocolate, chopped, such as Lindt
Fleur de sel or sea salt, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F.
  • In the bowl of an electric stand mixer (or using a hand mixer), beat together the brown sugar and butter until fluffy. Beat in the vanilla. Add the eggs 1 at a time, scraping the bowl after each.
  • Mix together the flour, salt and baking soda in a medium bowl. Add it to the creamed mixture in 2 to 3 batches, mixing until just combined. Mix in the oats, Granola, apricots and chocolate chips until just combined.
  • Use your preferred-size cookie scoop (or a regular spoon) to drop portions of dough onto lightly greased baking sheets, spacing them a couple inches apart. Bake until dark and chewy, 12 to 13 minutes. If you'd like a crispier cookie, just cook a little longer!
  • Let the cookies cool slightly on the baking sheets, then transfer them to a plate for serving.
  • Preheat the oven to 325 degrees F.
  • In a bowl, toss the oats with the oil, melted butter and salt. Spread the mixture out on 2 baking sheets and toast in the oven for 12 minutes, shaking the pans twice during the cooking time and making sure the oats don't burn. Set aside to cool a bit.
  • In a medium saucepan, combine the brown sugar, honey and molasses. Stir the mixture until combined, then heat over medium heat, stirring, until barely bubbling. Stir in the vanilla extract.
  • Toss together the toasted oats, pecans, sunflower seeds and almonds in a large bowl. Pour in the sugar mixture, stirring as you pour. Toss to combine; it will be sticky!
  • Thoroughly grease a baking sheet or line it with greased foil. Spread the mixture onto the baking sheet and bake until golden, about 30 minutes. Let cool, then use a fork to make clusters. Store in a jar until ready to use.

2 cups packed dark brown sugar
1 cup (2 sticks) salted butter, softened, plus more for greasing the baking sheets
2 teaspoons vanilla extract
2 large eggs
1 1/2 cups all-purpose flour
1 teaspoon kosher salt

1 cup Granola, recipe follows
1/2 cup chopped dried apricots
1/2 cup chocolate chips
6 cups old-fashioned (rolled) oats
1/4 cup vegetable oil
3 tablespoons salted butter, melted, plus more for greasing the baking sheet
1 teaspoon kosher salt
1 cup packed brown sugar
1/4 cup honey
