"SPA"CTACULAR FROZEN GRAPES
These grapes were served to me after a massage at my local spa. This recipe is perfect as an after-school snack, a simple appetizer at parties, or a sweet treat before bed. Substitute Splenda® for the sugar if you like! Can be kept in a sealed bag in the freezer for several months.

Steps:
- Remove grapes from stems and place in a colander. Wash thoroughly.
- Place grapes in a gallon-size resealable bag.
- Pour sugar into the bag and seal. Gently shake the bag to evenly coat grapes with sugar.
- Arrange grapes on a paper towel to air-dry any remaining water, about 15 minutes.
- Place grapes in a single layer on a shallow pan or baking sheet. Freeze for at least 2 hours.

- Pluck grapes from their stems and rinse in a colander. Pour the gelatin mix onto a plate. Place grapes on the plate one handful at a time and roll around until coated. Transfer to a pretty dish and refrigerate for 1 hour to allow the gelatin to set.

My mom made this often while I was growing up and I loved it. When I got married, I requested it to be served at the reception.

- In a saucepan, heat water and sugar until sugar is dissolved. Cool. Pour into a large pitcher or punch bowl; stir in the juices. Serve in chilled glasses.

SUGAR FROSTED GRAPES
Steps:
- At least 3 hours and up to 7 days before serving, remove the grapes from their stems and place in the freezer. When ready to serve, whisk the egg whites with the lemon juice in a large bowl until frothy. Put the sugar in another bowl.
- Drop the grapes into the bowl of egg whites, then pour the contents of the bowl through a strainer to drain the liquid. Dump the grapes onto a paper towel and roll them around until most of the excess egg white has been absorbed. Working in batches, add the grapes to the sugar and shake them around to coat. Shake off any excess. Transfer to serving glasses and serve immediately.

- Combine sugar, mint leaves & water in 2-qt casserole.
- Cook in microwave at full-power or stove-top till mixture begins to boil (about 2 1/2 - 4 minutes). Stir halfway thru cooking time, then let stand for 5 minutes.
- Add frozen raspberries + limeade & stir till raspberries are thawed.
- Gradually stir in club soda just b4 serving over ice.

- Combine water and sugar and heat until sugar has dissolved, stirring, about 5 minutes.
- Let cool slightly, and then pour over mint leaves.
- Add lemon juice, cover and steep for 1 hour.
- Strain, discarding solids, then add grape juice.
- Chill well.
- Just before serving, add chilled ginger ale to mint mixture.
- Garnish with additional mint leaves and lemon slices (if desired) and serve over ice.

- 1. Wash grapes and allow to dry. Snip into small clusters. Whisk egg whites until they run off the whisk in a thin stream; they should remain clear and foamy, not stiffly beaten. Place sugar in its own shallow bowl. Dip each grape cluster into the egg white, shaking off excess.
- 2. Next dip the grapes in the sugar and place on oven tray covered with parchment paper. Leave in a warm place to dry. The grapes can be prepared 2 or 3 weeks before use and can be kept in airtight bags in freezer.
- 3. I use these frosted grapes as a garnish when I am catering. A friend just called and asked me how to prepare them and I thought I would share with y'all too.
