DEVILED SHRIMP WITH BACON DIP
I found this recipe in the Pittsburgh Tribune-Review, as part of their special section of Super Bowl party recipes. It is originally from "Great Party Dips," by Peggy Fallon (Wiley, $16.95). It is an absolutely superb blend of shrimp, bacon, and cream cheese, with a bit of a kick provided by horseradish, cayenne, green onions, and parmesan cheese. Serve with crackers or pita chips. Great stuff.

Steps:
- Heat oven to 375 degrees. Chop shrimp coarsely.
- In a large skillet, cook the bacon over medium heat until browned, for 5 to 7 minutes. Drain on paper towels, then chop finely.
- In a medium-sized bowl, combine the cream cheese, mayonnaise, all but 1 tablespoon of the parmesan cheese, the horseradish, lemon juice, and cayenne. Mix until well blended. Stir in the shrimp, bacon, and green onions. Scrape the mixture into a small gratin or other shallow baking dish, spreading into an even layer. Sprinkle the remaining 1 tablespoon parmesan over the top.
- Bake for 20 minutes, until the mixture is bubbly hot and the top is lightly browned. Serve warm, right from the baking dish.
- Makes about 2 cups, or 6 to 8 servings.

Steps:
- Shell and devein the shrimp.
- Bring 1 quart salted water to the boil,, add the shrimp, and cook for 3 minutes ONLY.
- Drain at once and rinse in cold water to stop the cooking process.
- In a bowl combine the lemon slices, onion slices and pimiento; toss well.
- In a separate bowl, combine the oil, garlic, dry mustard, salt, lemon juice, wine vinegar, bay leaf, cayenne, and parsley.
- Whisk together and add to the bowl with the lemon slice mixture.
- Arrange the shrimp on a serving dish and pour the marinade over the top.
- Cover and chill for 3 hours ( no longer ) before serving.
- Serve with toothpicks .

- Preheat oven to 350°. Grease a shallow 1 quart casserole.
- Cook bacon in a medium skillet until crisp.
- Crumble and set aside.
- Chop shrimp to small bite size pieces.
- In a large mixing bowl, mash cream cheese and mayo together till well blended.
- Add the rest of ingredients.
- Pour into the casserole dish and bake till browned and bubbly 20-25 minutes.
- Serve with crackers or party rye.

- Cut each bacon strip in half widthwise; set aside. Wrap a basil leaf around each shrimp. Wrap a piece of bacon around each; secure with wooden toothpicks. , Place in a foil-lined 15x10x1-in. baking pan. - Cook & crumble the bacon. Set aside 2 tablespoons and place in a seperate bowl for later. Add the remaining bacon into a medium-sized bowl. Add in softened cream cheese and sour cream. Mix until well combined, I used a hand mixer. Once well combined stir in 1/2 cup chives, set aside.
- Prepare your shrimp, follow the SeaPak package directions for the shrimp that you picked. Once cooked, roughly chop up the shrimp into medium chunks, add shrimp to cream cheese mixture and stir it in along with 1 cup of cheddar and Monterey Jack cheese and mix well.
- Spoon into serving pan, you could really use anything you have just make sure dip is about 1 inch deep, or you may need to adjust cooking time. Cover with foil and bake for 25 minutes. Remove foil and add remaining cheese and chives then bake for another 10 minutes or until hot and bubbly and the cheese had a golden edge around the pan.
