Steps:
- Preheat oven to 400 degrees.
- In small bowl, combine oil, egg, and milk; set aside.
- Cook the bacon, cool, crumble, set aside.
- In large bowl, combine flour, sugar and baking powder. Make a well in the center. Add egg mixture all at once to flour mixture, stirring just until moistened.
- Batter should be a little lumpy. Fold in bacon, cheese and cereal.
- Fill 2/3 full into greased muffin cups.
- Bake for 15-20 minutes or until golden brown. Makes 12 regular muffins.
- Serve warm.

GRAPE-NUTS FLAKE MUFFINS
I love the flavor of Grape Nut Flakes and I have found a few of my favorite recipes with this cereal off of the Kraft website. I forget about the low fat cooking when these come straight out of the oven -the ole butter gets smeared on! =) These are also perfect for those folks looking for low sugar muffins.

Steps:
- Stir together the first 5 ingredients.
- Stir beaten egg into milk then add applesauce and stir well.
- Mix wet ingredients into dry stirring well.
- Stir in melted butter, cereal, and raisins.
- Let stand 5 minutes.
- Fill greased muffin tins 2/3 full.
- Bake at 400 degress for about 20 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with waxed paper.
- Combine flour, brown sugar, salt, baking soda, and cinnamon in a large bowl. Stir in buttermilk and vanilla extract; mix well. Pour mixture into prepared baking sheet and spread evenly with a spatula.
- Bake in the preheated oven until browned and firm, 20 to 25 minutes. Cool patty in the baking sheet for 10 minutes before removing to cool completely on a wire rack.
- Preheat oven to 275 degrees F (135 degrees C).
- Break cooked patty into chunks and put through a meat grinder, using a coarse blade. Divide crumbs over two baking sheets.
- Bake in the oven until dry, stirring every 10 minutes, about 30 minutes. Allow crumbs to cool completely and store in an airtight container.

These muffins are tasty and quick to make. Your family will love the flavor and they won't even know that they are good for them too! NOTE: If you do not have the Hazelnut coffee creamer you can use regular milk or 2%. Also if you do not have the peach butter butter you can use apple butter or apple sauce, or mashed...

- 1. Heat oven to 400^. Spray 12-16 regular size muffin wells--(cupcake pan);with no stick spray..set aside. In a medium bowl add the cereal and milk,mix slightly-then set aside.
- 2. In a large bowl combine the flour, baking powder,baking soda,cinnamon, brown sugar and salt.Mix with large spatula to combine and break up any sugar lumps. Set aside.
- 3. To the cereal /cream bowl add the egg and beat with a spoon. Stir in the peach butter,vanilla, melted butter and nuts..stir to combine well. Stir this mixture into the flour mixture and fold until flour is mixed in, only until moistened.
- 4. Spoon batter evenly into the prepared muffin cups, fill each cup to the top. Bake 22-25 minutes or until wooden toothpick inserted in centers comes out clean. Cool in pan 2 minutes. Remove to wire rack to cool.

- NUT TOPPING.
- IN BOWL: Add and mix together 1/4 cup brown sugar, 1/4 cup walnuts finely chopped, 1/2 teaspoon cinnamon, sprinkle on muffins just before putting muffins in to bake.
- STREUSEL TOPPING.
- IN BOWL: add and mix together 1/4 cup sugar, 3 tablespoons flour, 2 tablespoons butter, sprinkle on muffins just before baking.
- SUGAR AND CINNAMON TOPPING.
- IN SMALL BOWL: add and mix 2 tablespoons sugar and 1 teaspoons cinnamon and sprinkle on top of muffins before putting muffins in the oven to bake.
