PINK GRAPEFRUIT GELATIN

It's best to prepare this the day or night before you want to serve it, but not more than that. This also makes it the perfect dessert for summer entertaining: It's cool, light, refreshing, and impressive.

Pink Grapefruit Gelatin image

Steps:

  • Pour 1 cup grapefruit juice into a bowl. Sprinkle gelatin over and let stand to soften, about 5 minutes.
  • Bring sugar and 1 1/2 cups water to a boil over medium-high heat, stirring to dissolve sugar. Pour hot syrup over gelatin mixture; mix well to dissolve completely. Stir in remaining 1 3/4 cups juice.
  • Pour into a 9-by-13-inch Pyrex pan; cover, and refrigerate until set, 4 hours.
  • When ready to serve, cut gelatin into 1-inch cubes, and serve in tall glasses.

Festive Fruit Gelatin Mold image

Steps:

  • Prepare the gelatin mix according to the package instructions, using the seltzer in place of the cold water. Allow to cool for 30 minutes.
  • Meanwhile, place a mandarin followed by a blackberry in the grooves of a 2.1-quart fluted bundt pan. Repeat to form a circle. Pour in just enough of the gelatin to cover the fruit (about 1 1/2 cups). Chill until set, about 1 1/2 hours, leaving the remainder of the gelatin mix on the counter.
  • Sprinkle the blueberries in an even layer over the firm gelatin. Cover with the remaining mandarin oranges. Top with the remaining blackberries. Pour the remaining gelatin mixture over the fruit. Chill until firm, at least 8 hours and up to overnight.
  • When ready to serve, place the gelatin mold in a bowl of warm water for 2 minutes to loosen. Invert onto a circular serving platter. Fill the center of the mold with fresh berries to serve.

Two 12-ounce cans seltzer, chilled
One 15-ounce can mandarin oranges in light syrup, drained
3 cups blackberries
1 cup blueberries
1 1/4 cups mixed berries, for serving

Steps:

  • In a mixing bowl, combine grapefruit sections and 3/4 cup of the sugar. Set aside. In a small mixing bowl, combine gelatin and 1/2 cup of the cold water. Let stand 5 minutes.
  • Meanwhile, in a medium saucepan, combine the remaining sugar and remaining cold water. Heat and stir until sugar dissolves. Add gelatin mixture; grapefruit mixture; nuts; and, if desired, food coloring. Cook and stir until sugar is completely dissolved. Pour grapefruit mixture into a 2-quart mold or square baking dish. Cover; chill at least 6 hours. If using mold, unmold salad. Serve with whipped cream, if desired. Garnish with grapefruit peel curls, if desired.

Steps:

  • In a small bowl, sprinkle gelatin over 1/2 cup cold water; let soften.
  • Meanwhile, place grapes, sugar, and 1 cup water in a medium saucepan. Bring to a boil; reduce heat, and simmer, mashing occasionally with a spoon or potato masher, until grape skins are loosened, 10 to 15 minutes. Stir in softened gelatin until dissolved.
  • Strain mixture through a fine-mesh sieve, pressing to extract as much liquid as possible (add water if necessary to yield 3 cups); discard solids. Divide mixture evenly among four serving glasses; refrigerate until set, at least 2 hours.
  • In a small bowl, stir together sour cream and honey; spoon over gelatins, dividing evenly, and spread gently to edges. Serve immediately or chill up to 2 days. Just before serving, garnish with halved grapes.
