APRICOTS WITH HERBED GOAT CHEESE

After ending up with bunches of apricots one summer, I created this quick and simple dish. My friends were blown away with its fresh taste and uniqueness. -Wendy Weidner, Ham Lake, Minnesota

Apricots with Herbed Goat Cheese image

Steps:

  • Place goat cheese, minced basil, chives and milk in a mini food processor; process until smooth. Arrange apricot slices on a serving platter. Drop goat cheese mixture by teaspoonfuls over top. Sprinkle with salt and pepper; drizzle with balsamic glaze. Garnish with additional basil leaves. Serve immediately.

Steps:

  • For glaze, in a small saucepan, combine vinegar and lemon zest; bring to a boil. Cook 10-12 minutes or until mixture is thickened and reduced to about 1/3 cup (do not overcook)., Grill plums, covered, over medium heat 2-3 minutes on each side or until tender. Drizzle with glaze; top with cheese.

Balsamic-Glazed Apricots with Ricotta Clouds image

Steps:

  • In a medium skillet over medium heat, melt the butter and cook until the foam subsides. Place the apricots cut side down in the skillet and cook, stirring occasionally, until apricots are slightly tender and warmed through, 5 to 6 minutes. Meanwhile, in a small bowl, whisk together balsamic vinegar and the honey. When apricots are ready, and add honey-balsamic mixture to the skillet. Increase the heat to medium-high and cook, stirring frequently, until the apricots have cooked through and the glaze is bubbling, uniformly coating the apricots. To serve, place a scoop of ricotta on each serving plate, top with 2 apricot halves and drizzle with the honey-balsamic glaze from the skillet.

2 tablespoons unsalted butter
4 fresh apricots, pitted and halved
3 tablespoons balsamic vinegar
2 tablespoons honey

Grilled Apricots with Goat Cheese and Balsamic Vinegar image

Steps:

  • Remove the goat cheese from its package, place in a bowl, and let sit at room temperature to soften.
  • Cut the apricots in half along the seam that runs around the fruit; the two halves should come apart cleanly after you cut all the way around. Remove the pit. Drizzle the halves lightly with the olive oil and season with salt and pepper.
  • Heat the grill. Place a few apricots on the grill, cut side down, and grill for just under a minute. As you grill, press down firmly with tongs for a couple of seconds to form grill marks. Turn and cook for 10 seconds on the second side. Repeat with the remaining apricots.
  • Add a dash of water to the goat cheese and stir until it's pliable. Using two spoons, place a generous spoonful of goat cheese in the indentation of each apricot; scoop the cheese with the first one and use the second to push the cheese onto the fruit. Spoon a few drops of the balsamic vinegar over the apricots and season with more pepper. Serve immediately.

6 ripe apricots
3 tablespoons olive oil
