GREEK CHEESE BURGERS WITH TZATZIKI
Tzatziki- cucumber relish- delicious! Recipe from a friend many years ago- she has since passed away in her sleep.(95) This relish should be made at least 2 hours in advance.

- Tzatziki: Salt cucumber slices with the kosher salt in a bowl;stir to coat all. Set aside for 30 minutes. Rinse lightly and drain. Place cucumbers on paper towel to draw out more water. Wipe dry before using. Now in a food processor, add cucumbers, lemon juice, garlic,dill and pepper. Pulse to finely chop, stir into yogurt. Set aside for 2 hours. THIS RESTING TIME IS VERY IMPORTANT- check for salt and re-season if necessary, before serving. --- Cheese Burgers: Heat the grill or a skillet to medium-high. Mix ground beef and remaining ingredients; mixing well to combine. Shape into 4 patties and cook for 5-6 minutes on one side and flip and cook 3-4 minutes on other or until desired degree of doneness you like. Serve on a bun with the cucumber relish or serve the relish on the side- I like it in the bun with the burger.

- Set oven control to broil. Chop enough cucumber to equal 1/2 cup; place in small bowl (slice 8 slices from remaining cucumber for sandwiches; set aside). Stir in remaining sauce ingredients; refrigerate until ready to use.
- In large bowl, mix chicken, spinach, olives, cornstarch, oregano, garlic, salt and pepper. Shape into 4 oval patties, each about 1/2 inch thick. On broiler pan, place patties. Broil with tops about 5 inches from heat 10 to 12 minutes, turning once, until thermometer inserted in center of burgers reads at least 165°F.
- Place burgers in pita pocket halves. To serve, top each burger with tomato, cucumber slices and about 3 tablespoons sauce.

- Place shredded cucumber in clean dish towel; squeeze to remove any excess liquid. In small bowl, mix cucumber and remaining sauce ingredients. Cover; refrigerate until serving time.
- Heat gas or charcoal grill. In large bowl, mix all burger ingredients except buns, tomatoes and lettuce. Shape into 8 patties, 1/4 inch thick. Place patties on grill over medium heat. Cover grill; cook 5 to 8 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F.
- Spoon 2 tablespoons sauce on bottom half of each bun. Top with burger, tomato and lettuce. Cover with top halves of buns.

- Prepare the burger patties by combining all ingredients in a large bowl. Mix by hand then divide into four equal sections, roll each into a ball then press into a 5-inch round patty.

- Combine the meat, red onion, parsley, pine nuts, sun-dried tomatoes, garlic, feta cheese, salt and Greek seasoning in a mixing bowl. Work with your fingers until the mixture is thoroughly combined. Form into 4 patties. Grill or pan fry over medium-high heat for 2-3 minutes on each side or according to desired doneness (is using poultry or pork, make sure it's thoroughly cooked through). - To make the burgers: combine the beef, feta, oregano, half of the grated garlic, and black pepper in a large mixing bowl. Use your hands to gently combine the ingredients. Form into four patties that are the same diameter as your rolls — the patties should be slightly thicker at the edges with a slight indentation in the middle. Let the burgers rest while you prepare the tzatziki.
- To prepare the tzatziki: Peel your cucumber and grate it using the coarse side of a box grater (alternately, you can shred it using a vegetable peeler). In a small dish, combine the yogurt, cucumber, 1 remaining garlic, and dill. Season to taste with salt. Cover and refrigerate until ready to serve.
