GREEK-STYLE OVEN FRIES

When I first saw this recipe I though it was "Geek"-style, not Greek. Tried them anyway, and they're very good, geeky or Greeky!

Steps:

  • Cut each potato lengthwise into 8 wedges.
  • Combine lemon juice, olive oil, oregano, pepper, salt, and garlic in a large bowl.
  • Add potatoes and toss well to coat.
  • Place potatoes, skin side down, on a baking sheet that has been coated with cooking spray.
  • Bake at 400 degrees for 45 minutes or until potatoes are tender and lightly browned.

Steps:

  • Cut each potato lengthwise into 8 wedges; place in bowl, cover with cold water and let sit for 30 minutes; drain.
  • Pat dry with paper towels; toss with oil and place skinside down on greased baking sheet; combine oregano, salt and pepper and sprinkle over potatoes.
  • Bake in preheated oven at 400° for 45-50 minutes or until they are browned and tender; remove and sprinkle immediately with malt vinegar and serve.

  • Preheat the oven to 425 degrees Fahrenheit. Evenly space the oven racks to ensure even cooking.
  • (Watch this video or use a fry cutter.) Wash the potatoes, leaving the skins on. Slice off the ends of each potato, then slice off part of the side to make a base. Place the potato half cut side down and cut off a 3/8-inch slice, then lay the slice on its side and cut it into several long strips. Repeat until all potatoes have been cut into fries. The pieces can be uneven, but aim for as uniform of thickness as possible. See the video for full instructions!
  • Place the cut fries into a medium bowl and rinse with cold water until water is clear. Then fill the bowl with cold water and allow to rest for 10 minutes (while the oven preheats). Then drain the potatoes and dry them thoroughly with a clean dish towel.
  • Add the fries to a dry bowl and toss them with the olive oil, Greek seasoning and kosher salt. Line two baking sheets with parchment paper. Spread the fries in straight lines on the paper, placing them as far apart as possible.

  • To make this super easy Greek fries recipe, start by preparing the potatoes. Wash and peel the potatoes and cut into strips. At first slice the potatoes lengthwise into 1/2 cm (1/4 inch) slices and then cut each slice into strips. Place the potatoes in a large bowl with plenty of water to cover them.
  • Now it’s time to make a decision. Greek fries can be either fried or baked (for a healthier version).
  • If you choose to bake your Greek fries, then layer a large baking tray with parchment paper and pour in 2-3 tbsps of olive oil. Place the tray in the oven and preheat at 200C.
  • As soon as your oven is well preheated, drain and dry the potatoes and remove the baking tray from the oven. Place the potatoes on the baking sheet and season with salt and dried oregano. Toss the potatoes around to get them coated with the oil (add some more oil if necessary) and layer them evenly on the baking sheet.
