- On a lightly floured surface, roll out 1 disk of pate brisee to an 1/8-inch-thick circle, about 13 inches in diameter. Drape dough over a 9-inch pie pan. Transfer pan to refrigerator, and chill 30 minutes.
- Heat oven to 425 degrees. Whisk together the egg yolk and cream; set aside.
- In a large bowl, toss together the apples, lemon juice, granulated sugar, flour, cinnamon, nutmeg, and salt; place in chilled bottom crust. Dot with butter.
- Roll out the remaining disk of pate brisee as in step one. Brush the rim of the bottom crust with the egg wash. Place second piece of dough on top, and trim so 1 inch overhangs. Tuck the dough under, and crimp the edges with a fork or your fingers. Transfer pie to the refrigerator, and chill until firm, about 15 minutes.
- Remove pie from the refrigerator, brush with the egg wash, and sprinkle generously with sugar. Cut 4 vents in the top, allowing the steam to escape.
- Bake until crust begins to turn light brown, about 25 minutes. Reduce temperature to 350 degrees, and bake until golden brown and the juices are bubbling, 25 to 30 minutes. Transfer to a wire rack to cool. Serve pie with vanilla ice cream, if desired.
GREEN APPLE PIE
This is out of a cookbook from a little tea room that is now closed down. It was very popular back in the 50's and 60's here in Tulsa. It was called Brown-Dunkin which became Dillard's Department store years ago. In the 50's it was the place for fashionable lunching ladies. There is one catch to this recipe though. It has 4 different cooking times which are: 375 degrees for 40 minutes, 450 degrees for 10 minutes, 350 degrees for 45 minutes or 400 degrees at 50 minutes. UHMMMM! I think that I would go for the 350 for 45 minutes. I have not made this yet but am just going for the one that best suits the recipe.

Steps:
- For pastry, mix flour and salt; cut in shortening.
- Add water 1 tbsp at a time, using only enough to make a workable paste (too little will make it crumbly). This pastry, being exceedingly rich, must be handled deftly.
- Roll out pastry and line pan.
- Make 2 (9 inch) shells.
- Thorough chilling before rolling makes pastry easier to handle.
- For filling, line pie pan with one pastry shell and fill with sliced apples.
- Mix and sift dry ingredients over the apples.
- Add water and lemon juice; dot with butter, then top with secondary pie shell.
- Bake at 350 degrees for 45 minutes or until pie filling is done and pie is golden brown.
- If pie crust starts getting too dark before it is done.
- Cover with aluminum foil.
- ENJOY!

NEW MEXICAN APPLE PIE
Ask Pie Town locals what you should order at Michael Rawl's Good Pie Cafe and they'll suggest New Mexican apple pie. It's basically New Mexico in a pie dish: green chiles, pinon nuts, and on top, the state flag rendered in dough. Rawl, a Baltimore native, developed the recipe shortly after opening Good Pie Cafe in Pie Town, New Mexico in 2001. It has been the bestseller ever since.

- Make the crust: Cut the lard into 1/2-inch cubes; transfer to a plate and freeze at least 1 hour. Combine the flour, granulated sugar, salt and baking powder in a large bowl. Cut in the lard with 2 knives until the mixture looks like coarse meal with pea-size bits of lard (do not overmix). A little at a time, stir in 1/2 to 1 cup ice water until the dough holds together when squeezed; the amount of water will vary depending on the humidity. (You can also make the dough in a stand mixer with the paddle attachment.) Divide the dough between 2 sheets of plastic wrap; use the plastic to help form each half into a disk. Wrap tightly and refrigerate until firm, at least 1 hour or overnight.
- Make the filling: Combine the apples, flour, turbinado sugar, cinnamon, ginger, nutmeg, lemon juice, green chiles and pine nuts in a large bowl and toss. Let sit 20 minutes. Meanwhile, preheat the oven to 375 degrees F.
- Roll out 1 disk of dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch deep-dish pie plate, then spoon the filling into the crust. Roll out the remaining disk of dough into a 12-inch round; lay the dough over the filling. Press the 2 crusts together around the edge, then fold the overhanging dough under itself and crimp with your fingers. Cut a few slits in the top crust or prick with a fork to let steam escape. Whisk the egg with 1/4 cup water and brush over the top crust. Sprinkle with turbinado sugar.
- Bake, rotating the pie every 20 minutes, until golden brown, 1 to 1 1/2 hours. Transfer to a rack and let cool completely. Serve with ice cream.
MOM'S GREEN TOMATO-APPLE PIE
Steps:
- Preheat oven to 425 degrees F.
- Wash raisins and set aside. In a large bowl combine the tomatoes, apples, lemon rind, lemon juice, and vinegar.
- In a separate bowl, combine the salt, sugar, flour, cinnamon and ginger and mix well.
- Roll out 1 of the pie crusts to fit a pie plate and place in the plate. Set aside.
- Add dry ingredients into the wet ingredients and stir just until combined. Pour into pie shell. Dot top with butter.
- Add top crust and slit the top of pie. Bake 15 minutes, and reduce the oven temperature to 350 degrees F and bake for another 45 minutes.
GREEN TOMATO AND APPLE PIE

- Preheat oven to 450 degrees. Line an 8-inch pie pan with one of the store bought pastry dough and set aside. In a large bowl, combine the sugar, salt, cinnamon, lemon zest, apples, and tomatoes cut into half moons and seeds removed. Toss well to coat the ingredients. Add the lemon juice to prevent discoloration of the apples. Mound the apple, tomato mixture into the pie dough, mounding it slightly in the center. Dot with the butter. Add the second pastry dough on top and crimp the edges to seal. Brush the top of the pastry with the milk and sprinkle the toasted fennel and ground cardamom on top. Bake the pie for 10 minutes at 450 degrees, and then turn the heat down to 350 degrees. Bake for another 35 minutes, until the crust is golden. Let cool on a rack. Serve warm with ice cream or just alone.
GREEN TOMATO APPLE PIE

- Preheat oven to 425°F.
- Toss tomatoes and apples in a large bowl with lemon juice.
- Add sugar, flour, cinnamon and salt. Mix well.
- Put one pie crust in 9" pie pan.
- Spread ½ of the mixture into the pie crust and dot with 2 tablespoons of butter.
- Spread the other ½ of the mixture on top and dot with 2 tablespoons of butter.
- Cover with the top crust and crimp the edges with the tines of a fork.
- Cut slits in the top of the crust for steam to escape.
- Bake at 425º F for 15 minutes. Then, reduce heat to 350º F and cook for another 45 minutes.
- In the last 15 minutes of baking time, sprinkle pie crust with 1 teaspoon sugar.
- Cool slightly before serving.
SOUTHWESTERN GREEN APPLE PIE
American as apple pie, but not as traditional! It's simple to make, and quite tart but tempered by the brown sugar...and kicked up a notch by these secret ingredients! The color this turns is also so cool too. Feel free to use a homemade spice blend and your own homemade pie crust or a storebought one (like those double-crust kits to bake on both the top and bottom.) Snickerdoodle cookie dough also makes a neat lattice on this!

- Wash and core the apples, and cut them into regular segments. Make sure that all pits, stems, seeds, and seed pods have been removed.
- Put the apple pieces into a heavy-bottomed saucepan (a must for easy dispersion with the brown sugar) along with the can of chiles, liquid and all,on medium heat.
- Add the brown sugar. It's okay if it's lumpy or hard because it's going to melt.
- Stir around until the sugar is mostly dissolved.
- Spice the mixture to your liking, preferably a teaspoon or two of apple pie spice and 1/4-1/2 tsp red cayenne -- more if you dare!
- Add the cornstarch and stir in well.
- Keep the heat on low and let simmer for about 5 minutes, and stir well again, it should have a nice thick glue-like consistency.
- Pour into the pie shell and pat down evenly. Add a lattice or top crust, bake at 400F for 15-20 minutes after topping.

- Preheat oven to 425 degrees F (220 degrees C).
- Mix together the sugar, flour, cinnamon, nutmeg and lemon peel.
- Line one crust in a 9-inch deep-dish pie pan. Layer 1/3 of apples into pie crust. Sprinkle with sugar mixture and repeat until done. Sprinkle with lemon juice and dot with butter.
- Place second pie crust on top of filling and flute the edges. Cut vents in top crust and brush with milk for a glazed appearance if desired.
