Steps:

• Place 4 float glasses in the freezer to chill.
• Add a 1/2-inch layer of graham cracker crumbs to each chilled glass. Scoop 2 to 3 scoops of ice cream on top of the graham layer. Gently pour the soda on top of the ice cream. Top with more graham crumbs and serve immediately.

• Divide the coffee liqueur between 4 tall glasses. Top evenly with the seltzer and then the beer. Stir gently to combine. Carefully add 2 scoops of ice cream to each glass. Serve with a long spoon and straw.

• Preheat the oven to 325 degrees F.
• Bring the water, butter, lemon juice and saffron to a boil. Add all flour all at once and stir until the batter pulls away from the side of the saucepan. Transfer to a mixing bowl. Mix for 5 minutes, or until cool. Add the eggs, 1 at a time, making sure that each gets incorporated before you add the next. Add the lemon zest and adjust the seasoning with salt and pepper.
