PIZZA WITH FRESH TOMATOES AND BASIL

Steps:
- Position 1 oven rack in the center and the second rack on the bottom of the oven and preheat to 450 degrees F. Sprinkle the cornmeal over 2 rimless baking sheets. Roll out each piece of Pizza Dough into a 10 to 11-inch-diameter round. Transfer 1 dough to each prepared baking sheet.
- Drizzle 2 teaspoons of oil over each Pizza Dough. Sprinkle the mozzarella over the Pizza Dough, dividing equaling and leaving a 1-inch border around each pizza. Arrange the tomato slices in a single layer over the cheese. Sprinkle with the Parmesan. Arrange basil leaves on top, drizzle with a little more olive oil and sprinkle garlic all over. Bake the pizzas until the crusts are crisp and brown on the bottom and the cheese is melted on top, about 15 minutes. Drizzle 1 teaspoon of oil over each pizza. Sprinkle with basil for garnish and salt. Cut the pizza into wedges and serve immediately.
- Mix the warm water and yeast in a small bowl to blend. Let stand until the yeast dissolves, about 5 minutes. Mix the flour and salt in a food processor to blend. Blend in the oil. With the machine running, add the yeast mixture and blend just until the dough forms. Turn the dough out onto lightly floured surface and knead until smooth, about 1 minute. Transfer the dough to a large oiled bowl and turn the dough to coat with the oil. Cover the bowl with plastic wrap and set aside in a warm draft-free area until the dough doubles in volume, about 1 hour. Punch the down dough and divide into 2 equal balls. (The dough can be used immediately or stored airtight in the refrigerator for 1 day.)
FRESH TOMATO BASIL PIZZA
I crave this bruschetta-like pizza in spring, when I'm planting tomatoes in our garden. Slices make great appetizers when the tomatoes are ripe. But you can also serve the pizza alongside a grilled entree or as a meatless main course.

- Unroll crescent dough into one long rectangle. Press into an ungreased 13-in. x 9-in. baking pan; seal seams and perforations. Bake at 375° for 14-16 minutes or until golden brown. Meanwhile, in a small skillet, saute garlic and basil in oil for 1 minute. , Arrange half of the provolone cheese over the crust. Layer with half of the tomatoes, basil mixture, Parmesan cheese and pepper. Repeat layers. Bake for 14-16 minutes or until cheese is melted.

GREG'S TOMATO, BASIL, AND GARLIC PIZZA

- Warm oven to 375°. Using flour only to keep dough from sticking, work dough into a pizza crust shape. It should be about 12" across. Lightly sprinkle pizza pan or cookie sheet with corn meal, then gently lay crust on it. It is recommended to parbake the crust for up to 10 minutes, though this step can be omitted- it depends on the dough. Monitor dough for bubbling, and pierce to remove the bubble. While it is parbaking, mix garlic and basil into olive oil. After 10 minutes, pull crust from oven. Leaving a border no larger than 1/2", brush crust with oil mixture, making sure that you get plenty of the seasonings on the crust in the process- be aware you will not usually use all the oil. Still maintaining your border, top with cheese and then tomatoes, and return to upper-middle area of oven for 10-20 minutes. Watch for cheese to melt and crust to turn light golden brown (watch bottom of crust as well). Alow to cool for 5 minutes, then cut and serve.

- Cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, stirring often, about 8 minutes.
- Meanwhile, combine the next 7 ingredients in a food processor. Pulse just until the tomatoes are coarsely chopped (do not puree).
- Drain the pasta, reserving some of the pasta water. Toss the pasta with the tomato mixture and fresh mozzarella in a large bowl. Add some of the reserved pasta water (about 1/4 cup) if the sauce looks dry. Serve immediately.

- Prepare the dough following the instructions in our basic pizza dough recipe.
- Place the shallots in 1 tbsp of the vinegar, along with some salt to slightly pickle, and let sit while you cook one side of the pizzas.
- Drizzle the cooked side of the pizzas with 1 tbsp olive oil each, then divide the garlic between them. - Heat oven to 375° F.
- Unroll both cans of dough into rectangles. In ungreased 15 x 10 x 1-inch pan, arrange dough and press in bottom and up sides to form crust. Firmly press perforations to seal.
- Bake 13 to 17 minutes or until golden brown. Cool completely, about 30 minutes.

- Preheat oven to 425 degrees F (220 degrees C).
- Place the ground beef in a skillet over medium heat, and sprinkle on half the package of taco seasoning. Cook and stir the beef until browned and crumbly, about 8 minutes; discard excess grease.
- Spread the pizza dough out onto a 12-inch round pan, forming a rim of slightly thickened dough around the edge. Mix together the refried beans with salsa in a bowl; spread evenly over the crust. Mix tomato paste, water, chili powder, cayenne pepper, and the remaining half of the taco seasoning mix together in a bowl, and spread the sauce over the refried beans mixture. Top with the cooked beef, sprinkle the onions over the pizza, and evenly spread the cheese on top.
