Steps:

  • Remove and discard any bruised or undesirable outside leaves from the head of cabbage. Quarter the cabbage and grate it into a large bowl using the coarse side of a hand grater or the shredding blade of a food processor. Grate the carrot and add it to the cabbage, tossing together to combine. Add the onion, pickles, mayonnaise, salt and pepper. Stir together until thoroughly mixed. Chill for 1 hour before serving.

1 firm head green cabbage (about 2 pounds)
2 carrots, peeled
1/2 small sweet onion, such as Vidalia, peeled and chopped fine
1/4 cup diced sweet bread and butter pickles
1/4 cup diced sweet bread and butter pickles

Sweet and Tangy Coleslaw image

Steps:

  • In a small saucepan combine the sugar and vinegar and heat, stirring occasionally, until sugar is dissolved. Set aside to cool completely before proceeding.
  • Assemble remaining ingredients in a large, non-reactive mixing bowl and pour cooled sugar-vinegar mixture over all. Toss well to combine, cover with plastic wrap, and refrigerate overnight before serving.
  • When ready to serve, season with salt, freshly ground black pepper, and Essence, to taste, and toss thoroughly to combine.

Steps:

  • Pour 1/2 cup cider vinegar into a small saucepan. Add one cup sugar, stirring constantly to dissolve. Heat the mixture over medium heat until it begins to boil and all of the sugar is completely dissolved into the vinegar. Set the mixture aside and allow it to return to room temperature. You may also place the mixture in the refrigerator or freezer to cool it down faster, but don't leave it too long or it will turn into a syrup and be harder to work with.
  • Mix the cabbage, carrots and mayo in a bowl. Add approximately half of the vinegar mixture and mix until it is evenly distributed throughout the coleslaw. Add more of the mixture for a sweeter and tangier coleslaw. Add the salt and pepper to taste. Serve immediately or refrigerate for later use.

Steps:

  • In a very large bowl, combine mayonnaise, vinegar, sugar and celery seeds. Season with salt and pepper, and mix until smooth.
  • Shred the cabbage: Using a sharp knife, quarter and core the green cabbage. Arrange quarters cut side down, so they sit flat and stable. Thinly slice them lengthwise for longer shreds (or crosswise for shorter shreds). Repeat with the purple cabbage. You should get about 16 total cups of shredded green and purple cabbage.
  • Add all the shredded cabbage and the shredded carrots to the bowl, season with salt and pepper, and toss until well combined. (Hands work best here.)
  • Transfer coleslaw to a serving bowl and serve immediately, or cover and refrigerate 3 hours ahead of time and up to overnight for the best texture, and serve chilled.
