Grilled Bananas with Mexican Chocolate Sauce image

Steps:

  • In a medium saucepot on medium heat, melt the Mexican chocolate with the heavy cream. Whisk constantly until the chocolate is fully melted, and take care not to burn the chocolate. Turn the heat off and reserve.
  • Preheat a gas or charcoal grill, or a stovetop grill pan, over medium-high heat.
  • In a medium mixing bowl, mix the sugar with the cinnamon until evenly incorporated. Toss the bananas with the sugar-cinnamon mixture until fully coated. Transfer to the grill, flat-side down. Grill until the bananas are browned and the sugar is caramelized, about 2 minutes per side. Transfer the bananas to a serving platter. Drizzle with the Mexican chocolate sauce, sprinkle with some shredded coconut and serve with vanilla ice cream.

One 3.2-ounce disk Mexican chocolate, chopped

Steps:

  • Combine one chopped 3.2-ounce disk Mexican chocolate and 1/2 cup heavy cream in a medium saucepan over medium heat; cook, whisking constantly, until the chocolate is melted. Remove from the heat. Preheat a grill to medium high. Combine 1/2 cup sugar and 2 teaspoons ground cinnamon in a medium bowl. Halve 4 firm ripe bananas lengthwise, then halve crosswise to form 4 pieces each. Toss the bananas with the sugar mixture. Grill the bananas flat-side down until browned and the sugar is caramelized, about 1 minute per side. Transfer to a platter and drizzle with the chocolate sauce. Sprinkle with sweetened shredded coconut and serve with vanilla ice cream.

Steps:

  • In a bowl whisk together the sugar, the cornstarch, the yolks, and the whole eggs and add the milk, scalded, in a stream, whisking. In a heavy saucepan bring the mixture to a boil over moderate heat, whisking, and boil it, whisking, for 1 minute. Add the rum, boil the custard for 1 minute more, and strain it through a fine sieve into a metal bowl set in a larger bowl of ice and cold water. Chill the custard until it is cold and stir in the vanilla and the cream. In a food processor purée the bananas, stir the purée into the custard , and chill the mixture until it is cold. Freeze the mixture in an ice cream freezer according to the manufacturer's instructions.

  • In a small bowl, combine rum, honey and cinnamon; set aside. Cut bananas in half lengthwise, leaving the peel on. , Place bananas cut side down on grill. Steps:

  • Melt butter in a 10-inch heavy skillet over moderately high heat until foam subsides, then sauté banana, cut sides down, shaking skillet, 1 minute. Remove skillet from heat (away from flame) and sprinkle brown sugar around banana, then pour rum around banana. Return skillet to heat and continue to sauté, shaking skillet occasionally, until sugar begins to melt, about 30 seconds.
  • Add water, nutmeg, cinnamon, and a pinch of salt and cook over moderate heat, shaking skillet occasionally, until sauce is slightly thickened, 1 to 2 minutes.
  • Serve banana hot, sprinkled with nuts.

Steps:

  • Melt butter in a skillet over medium heat. Add bananas and saute until they turn brown, about 3 minutes. Sprinkle brown sugar over the bananas and cook until the sugar melts, about another 3 minutes. Remove from heat and pour rum into skillet; ignite with a match and let the flames die out.

Grilled Banana Splits with Hot Fudge and Rum Caramel Sauce image

Steps:

  • Preheat a grill to high, and lightly oil the grill grate.
  • Place the banana halves, cut side up, on a baking sheet and drizzle the honey evenly over them. Sprinkle with the brown sugar. Place the bananas, cut side up, directly on the grill, arranging them so they are perpendicular to the grill grate. Close the grill cover and cook until the bananas are caramelized around the edges and the fruit is beginning to pull away from the peel, 3 to 5 minutes.
  • Carefully transfer the grilled banana halves (still in their skins) to a small baking sheet. Using two small forks or a long, thin spatula, carefully remove the banana halves from their skins and place 2 pieces of banana on each dessert plate. (This is a little tricky because the bananas are now very soft.) Top each banana with 1 or 2 scoops of vanilla ice cream. Drizzle with the Hot Fudge Sauce and Rum Caramel Sauce. Top with dollops of whipped cream and sprinkle with chopped peanuts. Garnish each banana split with a maraschino cherry, and serve immediately.

  • Mix the brown sugar, salt, cinnamon and nutmeg. Gently heat the butter and brown sugar mixture just until the butter is melted. Add in the rum and stir until the mixture is well combined.
  • Cut the ends of the bananas off and slice the bananas (skin still on) in half lengthwise. Place the halves on the grill, cut side down, and grill them covered for approximately 3 minutes. The cut (grilled) side should be well browned.
  • Gently turn the banana halves over with grilling tongs or a long-handled spatula, and brush each half two or three times, with the rum glaze. Cover and continue grilling for about another 5-6 minutes.
