GRILLED CHEESE STICKS

These perfectly golden brown, toasty, buttery Parmesan-crusted grilled cheese sticks are filled with 2 ooey gooey melted cheeses, plus a few more surprises!

Grilled Cheese Sticks image

Steps:

  • Spread 1/2 teaspoon mayonnaise onto 1 side of each slice of bread. Sprinkle 1 tablespoon Parmesan cheese over mayonnaise layer, pressing cheese firmly into the bread.
  • Combine remaining mayonnaise, Cheddar cheese, Jack cheese, green onion, garlic, and cayenne pepper in a bowl.
  • Flip 1 bread slice over so the Parmesan layer is facing down, and spread Cheddar cheese mixture onto the bread. Top the Cheddar cheese mixture layer with the other slice of bread, so the Parmesan is on the outside of the sandwich. Cut sandwich into 4 equal slices.
  • Heat a nonstick pan over medium heat; turn heat down to medium-low. Place sandwich sticks in the skillet and cook until golden brown and cheese is softly melted, 2 to 3 minutes per side.

Mozzarella Stick Grilled Cheese image

Steps:

  • Bake the mozzarella sticks according to the package instructions.
  • Meanwhile, start the grilled cheese. Heat a griddle or large skillet over medium-low heat. Butter 1 side of each slice of bread and arrange the slices buttered-side down on the griddle. Top each slice of bread with 3 slices of cheese and cover with a lid to help the cheese melt. Cook until the bottom of the bread is toasted and golden brown and the cheese is melted, 4 to 5 minutes.
  • Top 2 of the bread slices with 3 baked mozzarella sticks each. Top with the remaining bread slices to form 2 sandwiches. Slice and serve.

6 frozen mozzarella sticks
4 tablespoons unsalted butter, at room temperature
4 slices hearty white bread or Italian bread
8 ounces fresh mozzarella, sliced into 12 slices

  • Preheat air fryer to 380 degrees F (175 degrees C).
  • Spread 1/2 teaspoon butter on each slice of bread. Place 1 slice of bread, butter side down in the air fryer. Top with 2 slices cheese. Place 2nd slice of bread, butter side up, over cheese.
  • Air-fry until golden brown, 3 to 4 minutes. Flip sandwich over and air-fry an additional 1 to 2 minutes.
