GRILLED CHICKEN SKEWERS WITH LEMON AND HONEY

Grilled Chicken Skewers with Lemon and Honey image

Steps:

  • For the sauce: In a small bowl, whisk together the yogurt, mayonnaise, zaatar and salt. Set aside.
  • For the chicken: In a medium bowl, whisk together the lemon zest, lemon juice, honey, olive oil, salt and coriander seeds. Slice the chicken breasts lengthwise into 1/3-inch strips; add to the bowl and toss to coat. Let sit at room temperature for about 15 minutes to marinate.
  • Preheat a grill pan over medium heat. Thread the chicken strips onto 8-inch skewers. Grill for about 4 minutes per side, until the chicken is cooked through and golden brown. Remove to a platter. Serve warm with the dipping sauce.

1/4 cup Greek yogurt
1 tablespoon mayonnaise
1 teaspoon zaatar
1/4 teaspoon kosher salt
1 teaspoon grated lemon zest (from 1 lemon)
2 tablespoons lemon juice (from 1 large lemon)

Grilled Lemon Chicken Skewers with Satay Dip image

Steps:

  • Whisk together the lemon juice, olive oil, salt, pepper, and thyme. Pour over the chicken breasts in a nonreactive bowl. Cover and marinate in the refrigerator for 6 hours or overnight.
  • Heat a charcoal grill. Grill the chicken breasts for 10 minutes on each side, until just cooked through. Cool slightly and cut diagonally in 1/2-inch-thick slices. Skewer with wooden sticks and serve with Satay Dip.
  • 1 tablespoon good olive oil
  • 1 tablespoon dark sesame oil
  • 2/3 cup small-diced red onion (1 small onion)
  • 1 1/2 teaspoons minced garlic (2 cloves)
  • 1 1/2 teaspoons minced fresh ginger root
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons good red wine vinegar
  • 1/4 cup light brown sugar, packed
  • 2 tablespoons soy sauce
  • 1/2 cup smooth peanut butter
  • 1/4 cup ketchup
  • 2 tablespoons dry sherry
  • 1 1/2 teaspoons freshly squeezed lime juice
  • Cook the olive oil, sesame oil, red onion, garlic, ginger root, and red pepper flakes in a small, heavy-bottomed pot on medium heat until the onion is transparent, 10 to 15 minutes. Whisk in the vinegar, brown sugar, soy sauce, peanut butter, ketchup, sherry, and lime juice; cook for 1 more minute. Cool and use as a dip for Grilled Lemon Chicken skewers.
  • Yield: 1 1/2 cups

Steps:

  • In a large bowl, combine the first nine ingredients; set aside 1/4 cup for basting. Pour half into a large bowl. Add chicken; turn to coat. Pour the remaining marinade into another large bowl. Add the zucchini, onions and tomatoes; turn to coat. Cover and refrigerate chicken and vegetables for up to 4 hours or overnight., Drain and discard marinade. Alternately thread chicken and vegetables onto metal or soaked wooden skewers. Grill, covered, over medium heat for 6 minutes on each side or until chicken juices run clear, basting occasionally with reserved marinade.

Place the cubed chicken into a large zip-closure bag and pour all but 2 tablespoons of the honey-lemon mixture over the chicken. Seal the bag and toss to coat. Transfer the bag to the refrigerator and let it marinate for at least 30 minutes. Set the remaining honey-lemon mixture aside (you will use this to brush on the chicken as it is grilling).
  • Preheat grill to medium heat. Remove chicken from the bag and discard marinade. Thread the chicken onto skewers* and season generously with salt and pepper.
  • Grill the skewers for 4-5 minutes on each side for a total of 8-10 minutes, or until cooked through, brushing occasionally with the reserved honey-lemon mixture.
  • To Serve: In a large bowl toss together the arugula, remaining 1 cup of basil, shallot and cheese. Transfer to a platter and sprinkle with pine nuts. Top the salad with the skewers and serve with optional garnishes. Enjoy!
