OVEN BAKED WESTERN FRITTATA
Besides fried egg sandwiches, I also enjoy a toasted Western on occasion. Sometimes I also make it as a Frittata for dinner.

Steps:
- Preheat oven to 350 degrees.
- In a medium sized skillet over medium high heat, fry the bacon until desired doneness in butter.
- Add the chopped vegetables and continue cooking until just softened.
- In the meantime, crack the eggs in a bowl, add half/half, salt and pepper to taste and whisk until combined.
- Pour mixture over the other ingredients in the skillet and cook until the bottom has just set.
- Place pan (with foil wrapped around the handle if not ovenproof) in the oven and bake for approximately 10 minutes or until the top is set.
- Watch closely!
- Cut into four wedges and serve hot.
FRITTATA
Steps:
- Heat oil in a large non-stick skillet over medium high heat. Add onion and bell pepper and cook for 3 minutes. Stir in potatoes and cook until golden brown. Add cooked leftover meat and toss to coat.
- In a mixing bowl beat together the eggs and cream and season with salt and pepper. Pour egg mixture into skillet and stir in chopped herbs. Top with grated cheese and brown under broiler for about 2-3 minutes until the frittata puffs.

Steps:
- Preheat broiler.
- Whisk together whole eggs and whites, milk, and 1/2 teaspoon each of salt and pepper.
- Cook bell pepper and onion in oil in an ovenproof 12-inch nonstick skillet over medium-high heat, stirring occasionally, until softened and golden, about 8 minutes. Add sausage and cook, breaking up large clumps, until no longer pink, about 2 minutes. Add egg mixture and half of cheese and cook, lifting up cooked egg around edges to let uncooked egg flow underneath, 3 to 5 minutes (top will still be moist).
- Sprinkle top with remaining cheese and broil 4 to 6 inches from heat until set, puffed, and golden brown, about 3 minutes.
- Cool 5 minutes, then loosen edges with a spatula and slide onto a plate. Serve warm or at room temperature.
SOUTHWESTERN FRITTATA
This tasty egg dish from Mary Relyea of Canastota, New York makes a great breakfast entree, but could easily be served for lunch or dinner, too! Fresh eggs are jazzed up with red tomatoes, onion and green bell pepper, then treated to a topping of savory mozzarella cheese.

- In a small bowl, whisk the eggs, milk, salt, mustard, pepper and cayenne; set aside., In a large skillet over medium heat, cook the onion, green pepper and garlic in oil until tender. - Coat an oven proof skillet with cooking spray. Heat the skillet, then add olive oil. Cook onion and pepper until lightly browned, about 5-7 minutes.
- Whisk eggs and milk together. Add to skillet and cook for 1 minute without stirring. Remove from heat.
