Steps:

  • Place the peppers directly on the burner of a gas stove over high heat or on a grill. Just as each section turns puffy and black, turn the pepper with tongs to prevent overcooking. (If you don't have a gas stove, place the peppers on a baking pan, and broil in the oven, turning as each side becomes charred.) Transfer the peppers to a large bowl, and cover immediately with plastic wrap. Let the peppers sweat until they are cool enough to handle, about 15 minutes. Transfer the peppers to a work surface. Peel off the blackened skin, and discard. Cut peppers in half and remove seeds.
  • Add peppers to the jar of a blender along with avocado, 1/4 cup olive oil, 1/4 cup chopped onion, 1/4 cup cilantro leaves, lime juice, 1/4 teaspoon salt, and 3 tablespoons water. Blend until smooth; set aside.
  • Preheat a grill pan over medium heat. Season halibut with remaining salt and pepper. Rub both sides of fish with remaining 3 tablespoons olive oil and transfer to grill pan. Cook, turning once, until cooked through, about 4 minutes per side. Remove from grill and cut into small pieces.
  • Divide fish evenly among the tortillas. Place 1 tablespoon chopped onion and 1 tablespoon cilantro leaves over fish. Top each with a piece of tomato. Add salsa and squeeze over lime halves; serve immediately.

2 poblano peppers
1 jalapeno chile
1/2 Hass avocado, peeled and pitted
1/4 cup plus 3 tablespoons olive oil
3/4 cup chopped onion
3/4 cup cilantro leaves
Juice of 1 lime
1 1/4 teaspoons coarse salt
1 halibut fillet (1 pound)
1/2 teaspoon freshly ground white pepper
8 fresh white or yellow corn tortillas, warmed according to package directions
4 slices ripe tomato, cut in half
2 limes, halved, for serving

Steps:

  • Preheat a grill to medium high. Whisk together the chipotle powder, cumin, orange zest and 1/2 teaspoon salt. Toss with the salmon and set aside.
  • Meanwhile, cut off the tops and bottoms of the oranges with a sharp knife. Place cut-side down, then cut off the peel and white pith. One at a time, hold each orange over a bowl and cut along the membranes to remove the segments, letting them fall into the bowl. Squeeze the juice from the membranes into the bowl. Chop the orange slices into small pieces, then return to the bowl. Add the avocado, red onion, cilantro, jalapeño, lime juice and a pinch of salt; toss well.
  • Lightly oil the grill and add the corn. Grill, turning occasionally, until charred all over, 12 to 15 minutes. After a few minutes, add the salmon to the grill and cook until well marked and charred at the edges, about 2 to 4 minutes per side, depending on the thickness. Grill the tortillas until marked and warmed, 20 to 30 seconds per side.
  • Cut the corn kernels off the cob and toss with the avocado-orange salsa. Divide the tortillas among plates and top with the salmon, salsa and more cilantro. Serve with the lime wedges.

  • Make slaw: Toss all ingredients together in a bowl. Chill at least 30 minutes and up to 2 hours, tossing occasionally.
  • Make salsa: Preheat oven to 425°. In a small roasting pan, toss together tomatillos, onion, and jalapeño. Roast until browned in places and tender, 25 minutes. Cool to room temperature and chill until close to serving time. In a blender, blend roasted vegetables, avocado, cilantro, salt, and pepper until smooth.
  • Grill fish: Prepare a grill for medium-high heat (450°). In a small, dry cast-iron skillet over medium heat, toast coriander and cumin until aromatic, 20 seconds; remove from heat and stir in paprika. Season fish chunks with salt and pepper and coat evenly with coriander mixture. Brush cooking grate clean and coat fish on both sides with oil. Place fish on an oiled grilling grid or in a fish basket, and grill without moving for 2 minutes. Begin turning fish chunks with a metal spatula, in the order added to grill, and cook until firm and golden, 2 minutes. Transfer to a platter. (Or, cook fish in an oiled, well-seasoned cast-iron skillet or grill pan.)
  • Warm tortillas: Heat a skillet over medium-high heat. Working with one tortilla at a time, dip into a shallow bowl of water. Cook in hot skillet until water evaporates from first side and tortilla is browned in places, about 30 seconds. Flip and cook until dry, about 15 seconds more. Wrap in a clean kitchen towel to keep warm. Repeat with remaining tortillas.
