GRILLED PROSCIUTTO WRAPPED FIGS STUFFED WITH GOAT CHEESE

Grilled Prosciutto Wrapped Figs Stuffed with Goat Cheese image

Steps:

  • Preheat the grill and brush with a grill brush to remove any excess crud and fat. After brushing, run an oiled towel over the grates to pick up any loosened crud or soot.
  • Drizzle each fig half with vinegar and fill each fig center with goat cheese. Sprinkle a couple flakes of crushed red pepper, if using, on top of the goat cheese and wrap each fig with a slice of prosciutto. Paint the outside of each fig very lightly with olive oil.
  • Put the figs on a cooler spot of the preheated grill. The idea here is that we want to grill the figs gently to cook the fig all the way through but to still get the char on the outside. Grill the figs on all sides so the prosciutto is starting to become crispy and the fig feels soft when squeezed, about 5 to 6 minutes.
  • While the figs are grilling, in a large bowl, toss the arugula with a little extra-virgin olive oil, some balsamic vinegar and the Parmigiano-Reggiano. Taste, and add salt, if needed. Arrange on individual serving plates or a serving platter and top with the figs. Drizzle a couple of drops of balsamic on each fig and serve.
  • Its figgy delicious!

Steps:

  • 1. Preheat a grill to medium.
  • 2. For walnut dressing: Whisk vinegar, mustard, 1/2 teaspoon salt, and black pepper in a small bowl. Gradually whisk in oils until smooth and slightly thick. Stir in shallot and thyme.
  • 3. For salad: Lightly brush figs with olive oil and grill, turning occasionally, until soft and lightly charred, about 6 minutes. Remove from grill and season with salt and black pepper to taste. Brush sliced bread with olive oil and grill until lightly toasted.
  • 4. Toss frisee, watercress, and walnuts with dressing. Add goat cheese and toss lightly. Divide salad among 4 plates, top with warm figs, and serve with toasted bread.

Grilled Goats Cheese With Fresh Figs image

Steps:

  • Use two 100g goats cheese rounds for this recipe.
  • Place the goats cheese on a lightly oiled baking tray. Drizzle a little olive oil on top of each cheese.
  • Cut the stem part off each fig and discard.
  • Now slice each fig into about 3 slices.
  • Place on the baking tray with the goats cheese and drizzle a little balsamic vinegar onto the figs (not onto the cheese).
  • Place under a hot grill for just a couple of minutes until the cheese starts to bubble.
  • Serve as a starter. Yum Yum!
  • **PS: If I manage to get my photo on here for this recipes you will see I've slightly cooked the cheese too long. Not that it matters but it doesn't look as nice on the plate as it should do. Ooops!

Baked figs & goat's cheese with radicchio image

Steps:

  • Preheat the oven to fan 160C/conventional 180C/gas 4. Unless the baking sheet is non stick, line it with foil, then brush the foil lightly with oil.
  • Cut the figs into quarters, from the top almost to the base, and arrange on the foil. Slice the goat's cheese and arrange in the centre of the figs. Bake for 10-15 minutes until the cheese is melted and tinged brown.
  • Meanwhile, whisk the dressing ingredients with some seasoning. Put a couple of good radicchio leaves on each serving plate. Remove the figs from the oven and place on the radicchio leaves. Scatter the walnuts on top. Drizzle with the dressing and serve warm or at room temperature.

GRILLED FIGS WITH POMEGRANATE MOLASSES

These are wonderful. First you toss them in a mix of balsamic vinegar and olive oil, then you grill them on both sides just until they soften and grill marks appear (at which point they are warm all the way through and just beginning to become jammy), then you remove from the grill and brush with pomegranate molasses. It's a match made in heaven. Serve while the figs are still warm, as a first course with goat cheese, or as a dessert with ricotta or yogurt.

Grilled Figs With Pomegranate Molasses image

Steps:

  • Prepare a hot or medium-hot grill or heat a grill pan to medium-hot. Cut figs in half.
  • In a large bowl, whisk together balsamic vinegar and olive oil. Add figs to the bowl and gently toss until they are thoroughly coated.
  • Place on grill or grill pan flat side down. Grill for 2 to 3 minutes (depending on the heat), until grill marks appear. Turn over using tongs or a spatula and grill for another 2 to 3 minutes on the other side.
  • Remove to a platter or sheet pan and brush each fig on the cut side with pomegranate molasses (you don't need much).
  • Arrange 2 slices of goat cheese and 2 to 3 whole figs (4 to 6 halves, to taste) on each of 6 serving plates, garnish with mint leaves, and serve.

Grilled Figs with Goat Cheese and Prosciutto image

Steps:

  • Combine goat cheese, rosemary, and a pinch of salt and pepper in a small mixing bowl, and stir.
  • Make a small slit in bottom or side of each fig. Fill a pastry bag fitted with a small plain tip with cheese mixture. Pipe cheese into each fig through slit. Fill figs with just enough cheese so they expand slightly.
  • Tear or cut the prosciutto slices into long strips. Wrap a strip of prosciutto around each fig, and skewer 4 figs on each rosemary sprig. Brush figs with olive oil, and season with salt and pepper.
  • Place figs on a moderately hot grill, rotating skewers until figs are very hot and cheese starts to ooze, about 6 minutes. Remove from grill; serve immediately with a drizzle of olive oil and good bread.
