GRILLED LEMONGRASS BEEF

Another recipe from Hot, Sour, Salty, Sweet. My Krogers sells lemongrass in a tube that works wonderfully for this since fresh lemongrass is hard to find. note: cook time includes marination.

Grilled Lemongrass Beef image

Steps:

  • This is great with the Vietnamese Herb and Salad Plate (some or all of Asian basil leaves, mint leaves, coriander sprigs, leaf letter, small scallions, lime wedges, bird chiles, cucumber, bean sprouts, carrot & daikon (fresh or pickled)).
  • Combine the lemongrass, garlic, shallots, and chile in a mortar. Pound into a paste. You can do this in the blender, adding a bit of water.
  • Transfer to a bowl and add fish sauce, lime juice, and water. Blend well. Add the sesame oil, blend, and set aside.
  • Cut the meat into very thin slices (less than 1/8 in if you can. This is MUCH easier partly frozen). Cut the slices into 1 1/2 inch lengths. Place the meat in the marinade. Cover and marinate 1 hour at room temperature or up to 8 hours refrigerated.
  • Thread the meat onto skewers and sprinkle with sesame seeds. Lightly oil the grill rack or broiler pan. Grill meat for 1 min each side (medium rare) or until thoroughly cooked.
  • Serve with salad and nuoc cham (Vietnamese table sauce) or nuoc leo (Vietnamese peanut sauce).

2 stalks lemongrass, trimmed and minced
2 -3 garlic cloves, finely chopped
2 shallots, finely chopped
1 serrano chili, finely chopped
2 tablespoons Thai fish sauce
1 tablespoon lime juice
1 tablespoon water
1 tablespoon sesame oil
1 lb rump roast or 1 lb beef eye round, trimmed of fat
2 tablespoons sesame seeds, dry roasted

GRILLED LEMONGRASS BEEF SALAD

Make this an entire meal with lots of lettuce as a base. Crunchy, sweet, salty, hot...you decide. Note: lemongrass paste can be used in place of fresh and may be purchased in the produce department of most grocers.

Grilled Lemongrass Beef Salad image

Steps:

  • Place the marinade ingredients (lemongrass through oil) into a blender or small food processor and blend or process until pureed.
  • Place the steak into a ziplock bag and scoop the marinade into the ziplock bag. Close the bag, squeeze out the air and massage the bag to coat. Refrigerate for 2 - 24 hours to marinade. Before grilling, beef may be salted, if desired.
  • Grill the meat over charcoal or gas grill for about 5-7 minutes per side. Avoid overcooking. Allow it rest for about 10 minutes before slicing into thin strips.
  • Toss the desired salad ingredients with the dressing and lay over the grilled beef strips.

2 tablespoons vegetable oil or 2 tablespoons olive oil
1 lb skirt steaks, flank steak or 1 lb flatiron steak
salt (optional)
2 tablespoons lime juice
2 tablespoons soy sauce
1 -2 tablespoon fish sauce
2 teaspoons white wine vinegar or 2 teaspoons unseasoned rice vinegar
2 fresh garlic cloves, minced
1 fresh red chili, de-seeded and minced (to taste) or 2 teaspoons sriracha chili-garlic sauce (to taste)
2 -4 teaspoons white sugar
1 pinch fresh ground black pepper
torn lettuce, romain, bibb, etc
cilantro leaf, chopped (adds much so don't leave this out)
basil leaves, chopped
green onion, chopped
shredded carrot
sliced cucumber
sliced tomatoes or grape tomatoes
bean sprouts
toasted sesame seeds

  • At least 1 hour before (overnight is better), marinate the beef: crush 1 tablespoon of sugar, half the ginger, 2 cloves of garlic, half the lemongrass, and 1 Thai chili in a mortar and pestle. Combine with the thinly sliced beef, along with 1 tablespoon each of fish sauce, oyster sauce, and oil. Mix well, then cover and store in the fridge.
  • At the same time, make your fish sauce: combine the remaining 2 tablespoons of sugar, 1 tablespoon of ginger, 4 cloves of garlic, and 2-4 Thai chilies (as comfortable) in a mortar and pestle. Crush into a fine paste, then transfer to a jar along with 2 tablespoons of fish sauce and 1 cup of water. Store in the fridge.
  • When you are ready to eat, cook your vermicelli to the time indicated on the package (usually 3 minutes), then drain and rinse well with cold water. Set aside. Prepare your vegetables. In the photo, I used quick pickled cucumbers, purple cabbage, lettuce, cilantro, lime, and fried onions.
  • To make quick pickled cucumbers, thinly slice 1/4 of an English cucumber, then toss with 1 teaspoon salt and 1 tablespoon sugar. Let sit for 15 minutes, then rinse in cold water.
