GRILLED SALMON WITH SPICY MANGO SALSA

Toss diced mango with habanero, lime and cilantro for a spicy relish for gorgeous grilled salmon.

Grilled Salmon with Spicy Mango Salsa image

Steps:

  • Preheat a grill to medium-high heat.
  • Crush the garlic clove, sprinkle with a pinch of salt, and mash into a coarse paste using flat side of a large knife. Mix the garlic paste with the cilantro, oil, habanero, mango, lime juice and scallions in a medium bowl. Season with salt and as much of the remaining habanero as desired for spiciness. Set aside.
  • Pat the fish dry and sprinkle with salt and pepper. Lightly oil the grill grates. Place the salmon, skin side-up, on the grill and cook until well-marked, 3 to 4 minutes. Turn the salmon and continue to cook until the fish is just cooked through, about 3 to 4 minutes more.
  • Serve the salmon with the salsa and a lime wedge.

1 clove garlic
Kosher salt and freshly ground black pepper
2 tablespoons coarsely chopped fresh cilantro
1 tablespoon olive oil, plus more for oiling the grill grates
1 habanero chile, stemmed, seeded, and finely chopped
1 ripe mango, peeled, seeded and diced (about 1 1/4 cups)
2 limes, 1 juiced and 1 cut into wedges
2 scallions, thinly sliced
4 center-cut skin-on wild salmon fillets (about 6 ounces each)

Grilled or Baked Salmon With Lavender image

Steps:

  • Place all ingredients except salmon, in saucepan over moderate heat, stirring with a wire whisk at all times until ingredients are reduced by one-third, to create a sauce.
  • When sauce has cooled slightly, brush on salmon filet.
  • Grill salmon, basting with sauce occasionally, setting some aside to top when served. Salmon is cooked when fish flakes.
  • To bake salmon, preheat oven to 350. Cover salmon with sauce, setting some aside to pour on salmon before serving.
  • Bake for 10 minutes or until salmon is flaky, basting occasionally.
  • Wonderful with rice or potatoes.

3 lbs salmon fillets
4 tablespoons honey
6 tablespoons virgin olive oil
1/2 teaspoon lavender, crushed
1/4 cup white wine
1 tablespoon Worcestershire sauce or 1 tablespoon tamarind paste
1 teaspoon lemon juice

Salmon with Mango and Lime image

Steps:

  • Combine melted butter, garlic salt, white pepper, lime zest, and half of the lime juice, reserving remainder for later.
  • Place 2 tablespoons of water in the rear and front of a Panasonic Countertop Induction Oven grill pan. Place salmon skin-side down on the grill pan, with the thickest part of the salmon toward the center of the pan.
  • Brush butter mixture over salmon and slide grill pan into position. Close the oven door and press "Auto Cook." Select the fish setting, 3, and press "Start." Turn the dial to select 2 pounds and press "Start" again.
  • Stir remaining lime juice, mango chutney, and sriracha sauce together in a bowl.
  • Slide the grill pan out when there are 4 minutes remaining on the timer. Pour mango mixture evenly over the salmon. Slide the grill pan back in place, close the door, and continue cooking until salmon flakes easily with a fork, 2 to 4 minutes more.
  • Remove the salmon from the oven and transfer to a plate. Garnish with cilantro.

Grilled Salmon With Lavender Butter and Mangoes image

Steps:

  • In saucepan, reduce shallots in chardonnay and 1/2 cup lemon juice.
  • Add clam juice and 1/2 tablespoon dried lavender.
  • Bring to a boil and reduce by 1/3.
  • Remove from heat and whisk in butter, bit by bit.
  • Strain mixture with fine grid strainer.
  • Add the remaining dried lavender and keep the sauce warm.
  • Salt and pepper to taste.
  • Grill salmon giving it a diamond shape marking.
  • Cut mango on each side of seed.
  • Place half, skin side down and with a thin blade, separate skin from pulp.
  • Cute each half mango lengthwise to create a fan effect.
  • Ladle 1/2 ounce of lavender butter sauce on plate.
  • Place salmon in middle of plate.
  • Garnish with mango fan.
  • Sprinkle circumference of dish with fresh lavender flowers.

  • Preheat a grill to medium high heat. Brush a large, heavy duty piece of foil with olive oil. The foil should be long enough to lay the salmon on top and wrap completely around it.
