I love cheese and fruit, so this pie is a natural pairing for me. Sweet and spicy wine-poached pears and a flaky, buttery cheese crust make for a winning dessert you'll want to make again and again. Pear Gruyere Pie image

Steps:

  • Place flour, cheese, sugar and salt in a food processor; pulse until blended. Add butter; pulse until butter is the size of peas. While pulsing, add just enough ice water to form moist crumbs. Divide dough in half. Shape each into a disk; wrap and refrigerate 1 hour or overnight., In a large saucepan, combine water, wine, sugar, cinnamon stick, vanilla and spices; bring to a boil. Add pears to poaching liquid. Cook, uncovered, 10-15 minutes or until tender., Using a slotted spoon, remove pears and cool slightly. Refrigerate until cooled; discard cinnamon stick. Meanwhile, return poaching liquid to a boil. Cook 12-15 minutes or until liquid is reduced to 3/4 cup. In a small bowl, mix cornstarch and water until smooth; stir into reduced liquid. Return to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Pour into a 1-cup measuring cup. Cool slightly; refrigerate until chilled., Preheat oven to 400°. On a well-floured surface, roll 1 dough portion to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Add pear filling; pour syrup over pears. Roll remaining dough to a 1/8-in.-thick circle. Cut decorative cutouts from remaining crust and arrange over filling; re-roll scraps as needed. Brush crust with egg. Place pie on a baking sheet., Bake 30-40 minutes or until crust is golden brown and filling is bubbly. Cover edge with foil during the last 15 minutes to prevent overbrowning if necessary. Cool on a wire rack. If desired, serve with ice cream.

Gruyere Rolls with Pecan-Chile Salsa image

Steps:

  • Preheat a medium heavy skillet. Add the pecans, chiles and garlic, toasting on all sides until fragrant, about 3 minutes. Remove from the heat and let cool slightly. Remove the outer peel from the garlic and remove the stems from the chiles. Transfer the pecans, garlic, chiles and1/3 cup water to a blender and blend until smooth. Season with salt and freshly ground black pepper.
  • Preheat the oven to 400 degrees F.
  • Place the tortillas on a work surface and top with 4 slices of cheese, 4 slices of pear and then drizzle with about 2 teaspoons of honey per tortilla.
  • Fold in the sides of the tortilla over the filling and roll up to fully enclose. Secure with 2 toothpicks to prevent it from opening while baking and brush with vegetable oil.
  • Place the rolls on a greased baking sheet and bake until tortillas are crunchy, about 35 minutes. Let the rolls cool enough to handle, about 5 minutes. Cut into thirds and serve warm or at room temperature with the pecan-chile salsa.

Cooking the turkey using two methods allows you to bring out the best qualities in both the white and dark meat. The legs and wings have the classic crisp and meltingly tender quality of slow-cooked duck confit, and the breast is perfectly roasted and juicy.

Turkey Leg and Wing Confit with Roasted Breast image

Steps:

  • Put the turkey legs and wings in a large bowl and sprinkle with 2 tablespoons salt and 1 tablespoon pepper. Add the minced garlic and shallot and chopped thyme, rosemary and bay leaves and rub all over until evenly coated. Cover and refrigerate overnight.
  • Scrape off as much of the seasoning mixture as possible from the turkey legs and wings and discard. Blot dry with paper towels. Melt the duck fat in a large wide pot or Dutch oven over medium heat. Nestle the turkey legs and wings skin-side up in the pot so that they're submerged in the fat. Bring to a very gentle simmer, cover and cook until the leg meat is extremely tender, but not falling apart, about 2 hours. Turn off the heat and set aside. The recipe can be prepared to this point up to 2 days in advance. Keep the turkey submerged in the fat and refrigerate it.
  • Meanwhile, prepare and roast the turkey breast. Position an oven rack in the lower third of the oven, remove the top rack, and preheat to 425 degrees F. Sprinkle the breast generously inside and out with salt and pepper. Stuff the cavity with the halved garlic and shallots, the remaining thyme, rosemary and bay leaves and the orange. Prop the breast up by placing two balls of aluminum foil under the space where the wings would attach, so that it doesn't topple over. Brush the skin with some of the rendered duck fat, and roast until just starting to brown, about 30 minutes. Reduce the oven temperature to 350 degrees F and continue cooking until golden brown and an instant-read thermometer inserted in the deepest part of the breast registers 160 degrees F, about 30 minutes more. Remove the turkey from the oven and set aside to rest.
  • While the turkey rests, finish the legs and wings. Carefully remove the legs and wings from the fat and blot dry with paper towels. Put 1/4 cup of the fat in each of 2 large nonstick skillets. Heat over medium-high heat until shimmering. Add the legs and wings skin-side down and cook until deeply browned and crisp, about 5 minutes. Flip and continue cooking until browned on the second side and heated through, about 3 minutes more.
  • Transfer the legs and wings to a serving platter. Carve the breast meat and transfer to the platter with the legs and wings. Serve with the Pear Chutney on the side.
  • Combine the pears, shallot, sugar, raisins, 1/2 cup vinegar, 1/2 teaspoon salt and 1/2 teaspoon pepper in a medium saucepan. Bring to a boil and reduce the heat to a simmer. Cook, stirring occasionally, until thickened, 40 to 45 minutes. Remove from the heat and stir in the remaining tablespoon vinegar. Serve warm or chilled. Store in the refrigerator for up to 2 weeks.

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix the ginger, saffron, olive oil, onion, and garlic together. Heat a large saute pan over medium-high heat. Add the oil mixture and cook until the onions soften, about 8 minutes.
  • Carefully add 2 cups of water to the mix and bring to simmer. Add the hens, skin side down into and cook for 10 minutes at a very low simmer. Remove only the hens to a baking dish, keeping the sauce warm over a low heat. Put the hens in oven and bake until it is cooked through, about 45 minutes. Serve on warm plate, hens first, then garnish with lemon and olives. Pour reserved sauce over hens.

Red Snapper Braised with Rosemary, New Potatoes, and Garlic Confit image

Steps:

  • Preheat the oven to 400 degrees F.
  • Make the potatoes: Heat the oil in an ovenproof 12-inch non-stick skillet over medium-low heat. Add the potatoes and cook, stirring, until soft, about 10 minutes. (The potatoes shouldn't brown.) Add the onion, rosemary, and thyme, and season with salt and pepper. Cook, covered, until the onions soften, about 5 minutes. Transfer the potatoes to bowl and set aside. (The potatoes may be made up to 3 days in advance and refrigerated.)
  • Make the snapper: Heat the oil in the ovenproof skillet over medium heat. Arrange the potatoes in 4 thick mounds in the skillet and scatter the garlic and rosemary around them.
  • Season the snapper with salt and pepper. Place 1 fillet on top of each mound. Add the wine, bring to a boil, and cook until reduced by half, about 2 minutes. Pour in the clam broth. Bring to a boil, cover, and braise in the oven until the snapper is barely opaque in the center, about 7 to 8 minutes.
  • Using a slotted spatula, transfer the potato mounds topped with the snapper to the center of 4 warmed dinner plates. Return the skillet to high heat and boil until lightly thickened, about 2 minutes. Add the tomatoes, olives and parsley and cook for 15 seconds. Taste for balance, adding some olive oil or more clam broth, if desired. Season with salt and pepper. Spoon half the sauce over the fish fillets and pour the rest into a warmed sauce boat. Serve immediately, garnished with the lemon slices, with the sauce passed on the side.

Steps:

  • Melt butter in heavy large skillet over medium heat. Add leeks; stir 1 minute. Reduce heat to low; cover and cook until leeks begin to brown, stirring occasionally, about 7 minutes. Stir in pear and sugar. Increase heat to medium; saut uncovered until any liquid evaporates, about 2 minutes. Season with salt and pepper. Transfer to bowl; cool. Stir in cheese and chives.
  • Place puff pastry sheets on work surface. Using 4 1/2-inch-diameter tartlet-pan rim or bowl as aid, cut out 4 rounds from each pastry sheet. Roll out each pastry round to 5-inch circle. Place leek mixture on half of each pastry round, dividing equally. Brush pastry edges with egg glaze. Fold pastry over filling, pressing to adhere. Press edges with fork to seal. Brush turnovers with egg glaze. Pierce pastry in several places with toothpick. Place on baking sheet. Chill 20 minutes.
