CARNE CON PAPAS

An old fashioned Cuban dish, with tender succulent meat and potatoes bursting with flavors. It is definitely a pleaser for any meat and potatoes fan.

Carne Con Papas image

Steps:

  • In a blender, combine green pepper, onion, garlic, 1/4 teaspoon cumin and salt. Pulse, while pouring 1/8 cup olive oil through top of blender. Blend until smooth; set aside.
  • Heat 1 tablespoon olive oil in pressure cooker on medium heat. Saute green pepper mixture for 1 minute, then stir in achiote powder and 1 teaspoon cumin. Cook for 1 minute, then stir in tomato sauce. Return to a simmer, then add beef; let simmer for 5 minutes. Stir in potatoes, then pour in wine and water. Drop in the bouillon cubes. Bring to a boil, and cook for 1 minute; add water, if necessary, to cover.
  • Cover with lid of pressure cooker. Following manufacturer's directions, cook under 15 pound pressure for about 30 to 45 minutes.

Steps:

  • Soak the dried Ancho chilies in boiling water; let cool. Remove stems and seeds from chilies; discard.
  • Puree the chilies, the water they were soaked in, the onion and the chicken bouillon in blender until smooth.
  • In large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Saute steak until cooked through.
  • Stir in potatoes, chile puree and an additional 1 cup of water. Season with salt and pepper. Bring guisado to a boil.
  • Taste sauce; season with more salt and pepper, if necessary. Reduce heat to low, cover and simmer until very little liquid remains.

Steps:

  • 1. heat the oil in a large dutch oven over medium heat and brown the meat. 2. add the onion and green pepper, and saute for about 3 min. until the onion is translucent. Add the garlic and cook 2 min. more. 3. Add the tomato sauce, water, wine, salt, sugar, paprika, and bay leaf. Reduce the heat and simmer, covered, for 45 minutes. 4. Stir in the potatoes and Spanish olives + capers (optional). Add more water if necessary to keep the stew from drying up. Cover and simmer 30 minutes more, until the meat is tender and the potatoes are cooked. *tends to come out watery. best to reduce water, increase tomato sauce. try with 1 lb. of meat, 2 potatoes, corn, 2 carrots/squash/sweet potato

  • Lo primero que haremos será reunir todos los ingredientes para poder empezar a preparar el guiso cubano. El chambarete de res es un corte de carne, especial para estofados, también conocido como largarto.
  • Lavamos las verduras (papas, pimientos, cebollines) y la naranja. Pelamos los ajos. En un recipiente colocamos la carne en trozos. Aparte licuamos la mitad del pimiento rojo y la mitad del pimiento verde, los ajos y los cebollines y la cebolla morada. Que quede bien molido.
  • Después de que hemos molido los ingredientes anteriores, lo vaciamos a la carne de res y dejamos marinar por 2 horas como mínimo en el refrigerador.
  • Colocamos una olla a presión al fuego, cuando esté caliente, agregamos el aceite de oliva, y doramos la carne junto con el sofrito.
