FOIL-PACKET POTATOES AND SAUSAGE
My family enjoys camping and cooking over a fire. These hearty foil-packet potatoes turn out beautifully over a campfire, on the grill or in the oven at home. We sometimes leave out the sausage and serve the potatoes as a side dish. Either way, it's so easy, and the spuds can be served right from the foil pouch for easy cleanup. - Prepare campfire or grill for medium heat. In a large bowl, toss potatoes with sausage, bacon, onion, parsley, salts and pepper. , Divide mixture among eight 18x12-in. pieces of heavy-duty nonstick foil, placing food on dull side of foil. Fold foil around potato mixture, sealing tightly. , Place packets over campfire or grill; cook 15 minutes on each side or until potatoes are tender. Open packets carefully to allow steam to escape. If desired, sprinkle with additional parsley.

HALLOWEEN MINI BAKED POTATOES WITH STICKY SAUSAGES
Our mini potatoes with sausages make great snacks for little fingers. If you're throwing a Halloween party you can even pretend the ketchup is blood

Steps:
- Heat oven to 180C/160C fan/gas 4. Rub the potatoes with a little olive oil and prick them all over with a skewer. Tip into a roasting tin and bake for 1 hr, or until tender when you squeeze them.
- Halfway through cooking the potatoes, whisk the honey and soy sauce with a splash of oil in a large bowl. Add the sausages and toss to coat in the mixture. Tip the sausage mixture into a baking dish and bake for 30 mins, turning the sausages halfway through, until browned all over.
- Split the cooked potatoes along the top and squeeze the sides so they open out. Put a sticky sausage into the top of each. Swirl the soured cream and ketchup 'blood' in a bowl and serve on the side.

HALLOWEEN MASHED POTATOES

Steps:
- 1. Peel and cut potatoes
- 2. Quarter potatoes
- 3. Add to pot of water salted with 1 TBLSP salt
- 4. Boil for 25 minutes or until tender
- 5. Drain potatoes and return to pot
- 6. Mash with a potato masher
- 7. Add 1/4 - 1/2 C milk
- 8. Add 1/4 cup of sweet unsalted butter
- 9. Mash until creamy
- 10. Add 1-2 Cup of finished potatoes to a pastry bag
- 11. Mound the remaining in a brain shape on a serving platter
- 12. Use the pastry bag to decorate and shape your brains.
COCKTAIL SAUSAGES
If you want to have something hot to pass around on a tray, then cocktail sausages are what you're after. There's nothing fiddly to make, nothing to go right or wrong, and everyone loves them. These are not just any cocktail sausages: the sesame oil, honey and soy give them a sweet-savoury stickiness that is pretty well impossible to resist.

- Preheat the oven to 200C/400 degrees F.
- Separate the sausages if they are linked and arrange them in a large, shallow-sided roasting tin.
- Whisk together the oil, honey and soy sauce and pour over the sausages, then use your hands, or a couple of spatulas, to move everything about in the pan so that all the sausages are slicked.
- Roast for 25 to 30 minutes; give them a shuffle about halfway through cooking if you happen to be near the oven.
MINI TWICE-BAKED POTATOES

- Preheat the oven to 375 degrees F.
- Place the potatoes on a rimmed baking sheet and toss with the olive oil and sprinkle with 3/4 teaspoon salt. Bake until a knife inserted into the potatoes goes in with little to no resistance, about 1 hour. Allow to cool slightly.
- In a medium skillet, cook the bacon over medium-low heat until the fat is rendered and the bacon is crispy, about 10 minutes. Drain well and place half of the bacon into a bowl. Add the panko, 2 tablespoons chives and 2 tablespoons Parmesan. Mix to combine and set aside.
- In another bowl, combine the sour cream, butter, heavy cream, the remaining bacon, 1/4 cup Parmesan, 2 tablespoons chives and 1/4 teaspoon salt. Set aside.
- When the potatoes are cool enough to handle but still warm, cut off the top third of each potato. Remove the skin from the tops. Using a 1 teaspoon measure or a melon baller, scoop out some of the insides of the cooked potatoes, leaving 1/4-inch borders around the edges. This creates little boats. Place the scooped insides and the peeled tops of the potatoes in a medium bowl and mash using a potato masher or the back of a fork. Add the reserved bacon and sour cream mixture. Using a rubber spatula, mix together the filling until well combine. Spoon the filling back into the potato boats until slightly overfilled and mounded on top. Top with a sprinkling of the panko mixture and a drizzle of olive oil. Bake until the filling is heated through and the topping is golden brown, 10 to 12 minutes. Serve warm or at room temperature.
