HAM AND BEANS
My Mom created this recipe and I really enjoyed it as a child. As an adult, my taste changed just a bit so I modified her recipe to 'kick it up' a bit. It is fabulous even though the ingredients list is quite short! This is a must make with leftover ham and everyone agrees it's absolutely delicious.

Steps:
- Rinse beans in a large pot; discard shriveled beans and any small stones. Add 8 cups of cold water. Let stand overnight or at least 8 hours. Drain and rinse beans.
- Return beans to pot and add ham, onion, brown sugar, salt, pepper, cayenne and parsley and water to cover. Bring to a boil; reduce heat and simmer 1 1/2 to 2 hours, until beans are tender. Add more water if necessary during cooking time.

HAM CHOWDER
I made the recipe up with leftovers I had one day. It's a ham and potato based soup with leeks, onions, rosemary, cream, bacon, and carrots. The ham and bacon give this soup a smoky taste while the cream gives it a rich texture. Chowder is better served the next day.

- Pour stock into a large pot set over medium heat, and bring to a simmer. Stir in the cubed ham and 2 tablespoons rosemary.
- In a large skillet over medium heat, cook diced bacon until crisp. With a slotted spoon, remove bacon, and add to pot. Drain half of the bacon grease, and return skillet to medium heat. Stir in onions, leeks, garlic, and green onions; cook until tender, then add to pot.
- Place cubed potatoes, carrots, and 2 tablespoons rosemary in pot; simmer until vegetables are tender, about 20 minutes. Turn off heat, and add cream to pot.

- Soak beans according to directions, using either method.
- Drain beans and measure liquid.
- Add water to make 1 1/2 quarts.
- Place beans, liquid, ham bone, onion and garlic in large kettle.
- Simmer 1 1/2 to 2 hours, or until tender.
- Add potato, carrots, celery and green pepper.
- Simmer 30 minutes longer.
- Remove ham bone.
- Cut up meat and return to soup.
- Thicken with flour blended with a little cold water.
- Add milk and heat gently.
- Season to taste with salt and pepper.
BASIC HAM AND BEAN SOUP
Hearty ham and bean soup. Easy to make and a great way to use a leftover ham bone. This soup also has lots of mixed vegetables.

- Rinse the beans, sorting out any broken or discolored ones. In a large pot over high heat, bring the water to a boil. Add the salt and the beans and remove from heat. Let beans sit in the hot water for at least 60 minutes.
- After the 60 minutes of soaking, return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, mustard and bay leaves in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes.
- Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season with ground white pepper to taste.

My mother found this recipe in the 1999 edition of The Best of Country Cooking. I could not get enough of this soup! It goes great with corn bread. From the book: "We also call this 2-day Bean Chowder, since it can be started in the afternoon, chilled overnight, and finished off the next day--if you can wait to taste it!"

- Place beans in a Dutch oven or soup kettle.
- Add water to cover by 2 inches.
- Bring to a boil; boil for 2 minutes.
- Remove from heat; cover and let stand for 1 hour.
- Drain beans and discard liquid.
- In same kettle, saute onion, celery, and garlic in butter until tender.
- Add beans, ham bone, water, broth, tomatoes, bay leaves, cloves, and pepper; bring to a boil.
- Reduce heat; cover and simmer for 2 hours.
- Remove ham bone; bay leaves, and cloves.
- When cool enough to handle, remove ham from bone; cut into small pieces and return to soup.
- Chill for 8 hours, or overnight.
- Skim fat from soup.
- Stir in milk; cook on low until heated through.
- Just before serving, stir in cheese.

If you happen to have a ham bone leftover from a roasted ham, cover it with water and simmer it with an onion and a bay leaf to make the stock for this rich, meaty soup. But if not, chicken stock works well, too.

- In a large pot over medium heat, heat 2 tablespoons oil or bacon fat. Add ham and cook until beginning to brown, 8 to 10 minutes. Use a slotted spoon to transfer ham to a bowl.
- Raise heat to medium-high and add remaining 2 tablespoons oil or fat to the pan. Add onion, celery, jalapeño peppers, bell pepper, bay leaf, 1 teaspoon salt and the black pepper; cook until lightly browned, 8 to 10 minutes, stirring frequently. (Add a little water, if necessary, to prevent burning on the bottom of the pot.) Stir in garlic and cook another 2 minutes.

- Rinse beans and drain.
- In large saucepan or soup kettle, combine beans, ham bone, and water.
- Bring to boil and boil for 2 minutes.
- Cover and remove from heat.
- Let stand for 1 hour.
- Stir in onions, garlic, parsley, tomatoes, bay leaf, rosemary, thyme and pepper. Return to boil; reduce heat and simmer, uncovered, for 1 1/2 hours or until beans are tender. Remove ham bone.
- Measure out 2 cups chowder; transfer to food processor or blender and puree until smooth.
- Return puree to chowder in saucepan and add ham, carrots and celery.

- Soak beans overnight in water to cover by 2 inches.
- Drain beans.
- Add water to cover beans by 1 inch.
- Cook beans with ham hocks (I use a ham bone with some meat) for at least 2 hours on low heat. Remove ham bone from beans and let cool.
- Add all other ingredients.
- Remove ham from the bone and return ham to the bean mixture. Cook until vegetables are tender, about 30 minutes to 1 hour.
- Freezes well.
- Note: I submitted this to a family cookbook and it is the recipe that "everyone" loves.
