Broccoli and Ham Gratin image

Steps:

  • Heat the milk in a small saucepan until scalding.
  • Take off heat.
  • In a saucepan, melt 4 tlbsps butter over moderately-low heat and saute the onion and garlic for 3-4 minutes. Add the flour and cook the roux, stirring, for 3 minutes more.
  • Add the heated milk in a stream, whisking, and simmer it, stirring, for 5 minutes.
  • Remove from heat and stir in the cheeses and season to taste.
  • Keep stirring just until the cheeses are melted and incorporated into the sauce.
  • In a well-buttered 14 inch gratin dish, combine the broccoli and ham and pour sauce over.
  • Sprinkle breadcrumbs over top, dot with remaining 2 tblsps butter and bake in a preheated 375F (190C) oven for 30 minutes, or until it is browned and bubbly.

1 garlic clove, minced
1/4 cup all-purpose flour
2 cups milk
1/2 cup parmesan cheese
1/2 cup grated swiss cheese
1 lb broccoli, trimmed, cooked in boiling, salted water until just tender, and chopped coarse, about 4 1/4 cups
5 ounces cooked ham, chopped
1 cup coarse dry breadcrumbs

Steps:

  • In 10-inch nonstick skillet, melt butter over medium heat. Add carrot and onion. Cook 6 to 8 minutes, stirring frequently, until vegetables are softened.
  • Add potatoes and sauce mix (from box), hot water and milk; stir well to combine. Heat just to boiling, stirring occasionally. Reduce heat. Cover; simmer 10 minutes, stirring occasionally. Stir in ham and broccoli; cover and cook 10 to 12 minutes, stirring occasionally, until potatoes and broccoli are tender.
  • Remove from heat; stir in cheese, and continue stirring until cheese is melted. Serve immediately.

This is one of the dishes Grandma served to our family during the holidays. Now, when the family gathers and I prepare this for my grandchildren, memories of those special times at Grandma's house fill my mind. I usually double this recipe, because the leftovers are fabulous when warmed in the microwave.

Steps:

  • In a greased 1-qt. baking dish, combine potatoes, ham and onion; set aside. , In a saucepan, melt butter over medium heat; stir in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until mixture is thickened and bubbly. Add cheese, salt and pepper; stir until the cheese is melted. Pour over potato mixture and stir gently to mix. , Bake, uncovered, at 350° for 35-40 minutes or until bubbly. Garnish with parsley.
