MINI HAM AND SWISS FRITTATAS
These little frittatas are so quick and easy, and my husband and kids just gobble them up. Make them in a 24 cup mini-muffin tin. I first had these at a neighborhood breakfast, and my neighbor added fresh onions and veggies, but this is great for making on nights when there isn't much in the fridge! Honey ham is good in these, as well. They can be served hot or cold and are great as reheated leftovers.

- Preheat oven to 375 degrees F (190 degrees C). Prepare 24-cup mini-muffin pan with cooking spray.
- Toss cheese and ham together in a bowl; distribute evenly between the 24 prepared muffin cups.
- Beat eggs, onion powder, garlic powder, and pepper together with a whisk in a bowl; pour in equal amounts over ham and cheese in muffin cups.
- Bake in preheated oven until tops turn light golden brown, about 12 minutes. Remove frittatas form cups with a spoon.

- 1. Heat the boiler. Heat the olive oil in a large, ovenproof skillet over medium heat. Add the onion and cook until clear and translucent, about 1 minute. In a bowl whisk together the eggs, ham, 1/3 cup of the cheese, thyme, and parsley. Season with salt and pepper.
- 2. Add egg mixture to onions and cook, without stirring, about 8 minutes, or until the bottom and edges are set but center is still soft.
- 3. Sprinkle the remaining cheese on the top of the frittata. Broil about 4 inches from the heat until the cheese is bubbling, about 1 minute. Transfer to a cutting board, cut into wedges, and serve.

- In a 9-inch non-stick skillet cook the onion and the bell pepper with salt and pepper to taste in 1 tablespoon of the oil over moderately low heat, stirring, until the bell pepper is tender. In a bowl whisk together the eggs, the ham, 1/3 cup of the Swiss cheese, and salt and pepper to taste, add the bell pepper mixture, and stir the mixture until it is combined well. In the skillet heat the remaining 1/2 tablespoon oil over moderate heat until it is hot but not smoking, pour in the mixture, distributing the ham and bell pepper evenly, and cook the frittata, without stirring, for 8 to 10 minutes, or until the edge is set but the center is still soft. Sprinkle the remaining 1/3 cup Swiss cheese over the top. (If the skillet handle is plastic, wrap it in a double thickness of foil.) Broil the frittata under a preheated broiler and about 4 inches from the heat for 2 to 3 minutes, or until the cheese is golden, and let cool in the skillet for 5 minutes. Slide the frittata onto a serving plate, cut it into wedges, and serve it warm or at room temperature.

- Preheat the oven broiler. Melt the butter in a medium nonstick skillet over medium heat. Add the shallot and sprinkle with 1/4 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until soft, about 5 minutes. Remove from the heat and cool. Reserve the skillet for cooking the frittata.
- Meanwhile, whisk the half-and-half and eggs together in a medium bowl with 1/4 teaspoon salt and a few grinds of pepper until smooth. Add the cooled shallots, cheese, parsley and chives and stir to combine.
- Heat the reserved skillet over medium heat. Pour the egg mixture into the skillet and stir a few times. Cook, undisturbed, until the bottom sets, about 5 minutes. - Mince garlic. Using the flat part of the knife, press down on the garlic clove until it crushes. Cut off the stubby end and peel off the skin. Chop with knife.
- In skillet, saute minced garlic, diced potatoes and onions in olive oil.
- Once brown, add a few teaspoons water and cook another 1-2 minutes. Then add in the diced ham.
- In bowl, whisk eggs, milk, salt and pepper.
- Pour egg mixture over the ham, potatoes and onions.
- Cook over medium heat for 5 minutes, until the eggs have set around the edges of the skillet.
- Place skillet into the oven and bake at 450°F for 5-10 minutes, or until eggs have set in the middle.
- Add shredded cheese to the top and bake another 1-2 minutes until cheese melts.
- Serve Ham and Cheese Frittata with Fresh Fruit.
- Cost $4.48.
- For the stovetop only, you could probably cook it for a lot longer over LOW heat until the eggs in the middle cook through.
- Another way would be to saute the garlic, onions, potatoes and ham in the skillet. Then place those into an 8x8-inch baking dish, then pour the eggs over and bake it. It may take a bit longer to bake since you don't cook the eggs on the stovetop at all. Just bake it until the eggs have set in the middle.

Steps:
- beat eggs, sour cream and seasonings together until well blended.
- Add diced ham to eggs.
- Melt butter in 10 inch fry pan.
- Add 1/2 egg mixture to fry pan and cook on medium heat for about 1 minute to set bottom.
- Layer swiss cheese on cooked eggs, then add the rest of the egg mixture.
- Continue cooking over medium heat until bottom begins to brown slightly.
- Remove pan from stove and place on top rack of oven broiler.
- Broil until completely set and top is nicely browned.
- (watch carefully, burns easily).
