This is a quick and healthy breakfast option that you can make in advance and freeze. Simply reheat on your way out the door in the morning. These freeze well and can be reheated at anytime.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Spray 12 muffin cups with cooking spray or line with paper liners.
- Combine eggs, spinach, red bell pepper, ham, egg whites, feta cheese, water, salt, and pepper in a large bowl. Ladle egg mixture into the prepared muffin cups.
- Bake in the preheated oven until set in the middle, 20 to 25 minutes.

Steps:
- 1. Preheat oven to 350 degrees. Spray the bottom and sides of a 12 serving regular muffin tin.
- 2. In a large bowl add eggs and heavy cream.
- 3. Beat with a whisk very vigorously until frothy.
- 4. Add the salt, pepper, onion powder, ham, spinach, and Swiss cheese. Beat again until thoroughly mixed.
- 5. Pour eggs into the muffin tins being sure not to overfill them.
- 6. Sprinkle the tops with Feta cheese and then cheddar cheese.
- 7. Bake 20-25 minutes or until set but not overcooked.
- 8. Test by pressing in the middle with a finger. They should not be soft in the middle but not too brown on the top and sides. Makes 12 muffins.

- To the flour mixture you will now add in the melted butter, cream, eggs and water. Thoroughly mix all the ingredients together to form a batter. The batter will be slightly thick as these are dense muffins.
- Divide batter evenly into the parchment paper muffin cups. Sprinkle each muffin top with the remaining 1/2 cup shredded cheddar.
