QUICK AND EASY PEANUT BRITTLE (MICROWAVE)
I'll bet I made this 30 times last year during the Holidays, It is the best Peanut Brittle I have ever tasted!! and so easy, great to give as a kitchen gift. I get all of my ingredients together before I start so that it doesn't have a chance to cool before I mix in the baking soda.

Steps:
- 1. grease Teflon cookie sheet with butter.
- 2. In glass microwavable bowl combine peanuts. sugar.corn syrup and salt
- 3. microwave on hi for 6-7 minutes, I microwave for 3 then give it a quick stir and then microwave for another 3 minutes
- 4. stir in butter and vanilla, and return to microwave for another 2 minutes,
- 5. Remove from micro wave and quickly stir in baking soda, mixture will look slightly foamy. Pour on to prepared cookie sheet and spread quickly with the back of the spoon. cool and break into pieces.
MOM'S EASY PEANUT BRITTLE
My mom got this recipe years ago from someone she worked with...she made it at Christmas and holidays quite a bit. I have never made it, but I know it tastes yummy!! If you like alot of peanuts to candy ratio, use the whole 1 1/2 cups peanuts (or more if you like)...it's purely personal preference!

Steps:
- Stir syrup, water and sugar together in large, heavy pan to hard ball stage (250*F- 265*F-- A little of this syrup dropped into cold water will form a hard ball).
- Stir in butter and peanuts until golden brown.
- Stir in vanilla and soda.
- Pour into 2 buttered pizza pans, just shaking pan to even out mixture.
- Cool and break into pieces.
MOM'S BEST PEANUT BRITTLE
This is a wonderful peanut brittle that is easy to make and wows everyone! Have all the ingredients for this recipe measured out and ready. This recipe requires that you react quickly. You do not have time to measure ingredients in between steps.

- Grease a large cookie sheet. Set aside.
- In a heavy 2 quart saucepan, over medium heat, bring to a boil sugar, corn syrup, salt, and water. Stir until sugar is dissolved. Stir in peanuts. Set candy thermometer in place, and continue cooking. Stir frequently until temperature reaches 300 degrees F (150 degrees C), or until a small amount of mixture dropped into very cold water separates into hard and brittle threads.
- Remove from heat; immediately stir in butter and baking soda; pour at once onto cookie sheet. With 2 forks, lift and pull peanut mixture into rectangle about 14x12 inches; cool. Snap candy into pieces.

EASY NO-FAIL MICROWAVE PEANUT BRITTLE
I have been making this since microwaves first came out, it's so easy and really a no-fail recipe, you may use other kinds of nuts if desired --- *warning* this is very habit-forming :)

Steps:
- Combine sugar and corn syrup in a 3-qt heat-resistant plastic microsafe bowl.
- Microwave on high for 5 minutes.
- Stir in peanuts; microwave on high for 2-3 mins longer, or until peanuts and syrup are lightly browned.
- Add butter, vanilla and baking soda.
- Mix until light and foamy (be careful, syrup is HOT!).
- Pour quickly onto a buttered cookie sheet, and spread to desired thickness.
- When cool, break into pieces.

- I used my 6 quart Smart Set crockpot for this. I like the Smart Set because I can set it for 30 minute intervals and it will beep for me when the 30 minutes is done. And I seem to need the beeps, because I tend to wander off if I find something shiny. Drop the 4 tablespoons of butter into your crockpot. Add the sugar and the corn syrup on top of the butter. Pour in the vanilla. Cover your crockpot and turn to high for one hour. Line 2 cookie sheets with parchment paper or release foil. After an hour, stir well to mix everything around. Add the baking soda. It will sizzle and make fun noises. Your sugar mixture will be kind of milky-yellow and the sugar might still look granulated. Cover again and cook on high for another 30 minutes. Check and stir in nuts. Cover and cook again for another 15-30 minutes, or until the sugar mixture is brown and looks the color of peanut brittle. Or a payday candy bar. Then, USING OVEN MITTS, carefully (CAREFULLY! seriously---use the oven mitts) pour half of the pot onto each cookie sheet and spread out with a spatula. It will be lumpy. that's because there are nuts. Let cool at room temperature for about an hour, then tear into pieces.
QUICK PEANUT BRITTLE
Break this salted peanut brittle into shards to decorate puds or give as a gift to a foodie friend. It will keep for several weeks in an airtight container

Steps:
- Line a baking tray with baking parchment. Melt the sugar in a medium frying pan over a medium heat for 4-5 mins until caramelised - it should be a dark amber colour. Don't stir, as this causes the sugar to crystallise - instead, tilt the pan slowly so the sugar melts evenly.
- Add the peanuts, stir with a wooden spoon, then quickly and carefully tip onto the prepared tray. Immediately sprinkle over the sea salt flakes and leave to cool until set. Will keep for several weeks in an airtight container.
