ITALIAN SUBS (HOAGIES OR SUBMARINE SANDWICHES)
Quick and easy, but oh so good! A family favorite. I prefer homemade Italian Dressing (my variation of Recipe #20158, see my review there) but others in the family prefer store bought.

Steps:
- Toast open sub rolls under the broiler until lightly browned.
- Top each roll (covering both sides) with 1 slice ham, 1 slice turkey (optional), 4 slices hard salami, 6 slices pepperoni and 1-2 slices provolone cheese.
- Place back under the broiler and heat until the cheese it brown and bubbly.
- Remove from oven and top with Italian Dressing or mayo. Serve with chips and carrot sticks.

BAKED HAM HOAGIES
For any holiday or gathering, I prefer quick-and-easy dishes since I work full-time. This main dish is fun since everyone can fix their own sandwich the way they like it. Adding cola to the ham while it bakes makes for moist, tasty slices. -Sundra Hauck, Bogalusa, Louisiana

- Place ham in a roasting pan. Score the surface with shallow diagonal cuts, making diamond shapes. Add water to the pan. Cover and bake at 325° for 1-1/4 hours., Pour cola over ham; sprinkle with brown sugar. Bake, uncovered, 30-45 minutes longer or until a thermometer reads 140°. , Let stand for 10 minutes before slicing. Serve on buns with lettuce, cheese and tomatoes.

- Cut French bread in half lengthwise; place cut side up on a baking sheet. Bake at 350° for 4-5 minutes or until toasted. , In a small bowl, combine the mayonnaise, lemon juice and garlic; spread over bread bottom. Layer with turkey, ham, salami, pepper, onion and cheese. Bake for 7-8 minutes or until meat is heated through; broil 3-4 in. from the heat for 3 minutes or until cheese is lightly browned., Spread guacamole over bread top; place over cheese. Cut into six slices.

- Spread mayonnaise on each side of each side of the hoagie bun. Layer each side of the hoagie with ham, salami, and pepperoni then layer the provolone cheese down the center. Place into the broiler (on low) and cook, watching carefully, for 2 minutes or until the cheese is melted.
- Place the lettuce down the center followed by the tomatoes and pepperocinis. Drizzle the top with Italian dressing, to taste and a sprinkling of sea salt, freshly cracked pepper, crushed red pepper, to taste. Serve immediately. Enjoy.

- Prep your veg! Cut 1 head of iceberg lettuce in half through the core. Peel off flimsy outer layers. Reserve one half for another use (perhaps this Iceberg Salad with Italian Dressing?). Cut remaining half in half again through the core (so you have two quarters), then thinly slice crosswise to create shreds. Peel ½ small red onion and cut in half through the root. Thinly slice each wedge lengthwise so that you make wispy arcs. Cut 1½ cups pickled peppadew peppers in half.
- Drain and finely chop 1 cup jarred mixed giardiniera. Aim for the veg to be the size of peas—you don't want huge pieces that will get in the way of your sandwich experience. Transfer to a small bowl. Stir in ⅔ cup mayonnaise; taste and season with salt.
- Slightly overlap 2 sheets of parchment paper to create 1 larger sheet. Cut 16x4" loaf sesame bread in half lengthwise with a serrated knife and place on parchment. You will build the sandwich on parchment for easy wrapping and cutting.
