HAM CASSEROLE
In Alpharetta, Georgia, subscriber Gail Earman turns to this recipe when she wants to use leftover ham. The slightly sweet combination of ham, pineapple tidbits, rice and Swiss cheese is popular at her house. "We even featured this recipe in our family cookbook," she writes.

- Drain the pineapple, reserving 1/2 cup juice; set pineapple aside. In a large bowl, combine the mayonnaise, salt, mustard, pepper and reserved pineapple juice; mix well. Fold in the rice, ham, green pepper, 1 cup of Swiss cheese, onion and pineapple., Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 30 minutes. Sprinkle with remaining cheese. Bake, uncovered, for 10 minutes or until heated through and the cheese is melted.

- Preheat oven to 350 degrees F (175 degrees C).
- Place potatoes, celery, and carrot in a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and transfer to a 2-quart baking dish.
- Melt 3 tablespoons butter in a large skillet over medium heat; cook and stir ham, green bell pepper, and onion until vegetables are tender, about 5 minutes. Transfer ham mixture to baking dish and mix with potatoes.
- Melt remaining 1/4 cup butter in a clean skillet; cook and stir flour in melted butter until smooth, about 3 minutes. Gradually stir in milk and season with salt and black pepper. Bring to a boil, stirring constantly, until thickened, about 2 minutes. Add Cheddar cheese; stir until melted. Pour cheese mixture over ham and potatoes. Sprinkle with bread crumbs.
- Bake in preheated oven until bubbly, 25 to 30 minutes. Allow casserole to rest for 5 to 10 minutes before serving.

- Preheat oven to 375°. In a saucepan, bring the potatoes, carrot, celery and water to a boil. Reduce heat; cover and cook until tender, about 15 minutes. Drain. , In a large skillet, saute ham, green pepper and onion in 3 tablespoons butter until tender. Add the potato mixture. Transfer to a greased 1-1/2-qt. baking dish. , In a large saucepan, melt the remaining butter; stir in flour until smooth. Gradually whisk in the milk, salt and pepper. - Preheat the oven to 350 degrees F (175 degrees C). Melt butter in the bottom of an 8x4 inch loaf pan. Sprinkle brown sugar over the butter. Slice pineapple rings in half, and arrange them over the sugar.
- In a large bowl, mix together the ham, onion, bread crumbs, eggs, and 1/4 cup of juice from the pineapple. Blend in the mustard powder and cayenne pepper. Pack half of the mixture into the pan on top of the pineapple slices. Sprinkle the Swiss cheese over it, then pack the remaining ham mixture on top. Cover with aluminum foil.
- Bake for 45 to 50 minutes in the preheated oven. Let cool in the pan for 5 minutes, then turn upside down onto a serving plate. Slice as you would a meatloaf, and serve.

Steps:
- Drain pineapple, reserve the juice.
- Preheat oven to 375*.
- In a small bowl, mix together butter, brown sugar, and drained pineapple.
- Coat a 10x10" baking pan with vegetable spray, pour in the pineapple and pat it out smoothly on the bottom of the pan.
- In a large mixing bowl, beat the eggs with a fork.
- Stir in the ham, pineapple juice, bread crumbs, parsley, onions, mustard, ginger, curry powder and pepper.mix well.
- Spread the ham mixture over the pineapple, patting it firmly over the pineapple.
- Bake for 45 minutes.
- Remove from the oven and allow to stand for 10 minutes.
- To serve, invert onto a serving platter.
- If any of the pineapple mixture remains in the bottom of pan, pat it on the loaf and serve immediately.
