- Whisk together the first eight ingredients. In a large nonstick skillet, heat butter over medium heat. Pour in egg mixture; cook and stir until eggs are thickened and no liquid egg remains. Sprinkle with additional minced herbs.

Steps:
- Slice the cheese into tiny squares.
- Crack the eggs into a bowl and mash them up with a fork.
- (Be sure to wash the fork to prevent raw egg poisoning.) Put the butter on a pan on a stove-top set on high.
- Let it melt and move it around until it covers the entire pan.
- Pour the cheese and the eggs into the pan, and using a fork or something else, spread the eggs around, never letting them stay in one space too long.
- Take the eggs out when you desire according to wether you like them hard or soft.
- Enjoy.

- In a bowl, whisk together the eggs using a fork. Don't season with salt or pepper. Place a non-stick pan over medium-low heat. Add the butter, and let it melt.
- Pour the eggs into the pan, increase the heat to medium and shake the pan a few times. After about 15 seconds start pushing the rubber spatula from the sides of the pan to the center of the pan, folding the eggs from time to time. This will take about 30 - 60 seconds. Spread the shredded cheese over the eggs and continue to cook on low heat until the cheese melts and the eggs are creamy and soft. Gently fold from time to time, but as soon as the cheese starts to melt, stop stirring and remove from the heat. This should not take more than 20 seconds. Season to taste with salt and pepper, and serve as soon as possible.

- Add eggs, half and half, salt and pepper to a mixing bowl, and whisk until thoroughly mixed. Set aside until ready to use.
- Add the oil to a medium-sized, non-stick saute pan over medium heat, and allow to come to temperature. If you are using butter, do not allow it to brown. If it does, wipe pan clean and start over, slightly lowering the heat if necessary.
- Once the oil is heated through, swirl it to make sure it is evenly coating the pan, and then pour in the egg mixture, top with the cheese, and allow the mixture to sit, undisturbed for about 30 seconds to 1 minute (just until the outer ring of the eggs begins to look opaque).
- Reduce the heat to medium-low and begin working from the outer edges of the pan, and using a silicone spoon or spatula, begin gently pushing the eggs toward the center, allowing the uncooked egg to flow over and spill outward, toward the perimeter of the pan. Resist the urge to stir.
