LEFTOVER ROAST BEEF HASH
Our family always has leftover roast beef and this recipe is a great way to finish it up!

Steps:
- Place potatoes on a microwave-safe plate and prick skins with a fork. Cook in the microwave until slightly tender, 7 to 8 minutes. Cut into 1-inch cubes.
- Combine potatoes, roast beef, onion, green bell pepper, and mushrooms in a bowl.
- Preheat an electric skillet to 350 degrees F (175 degrees C). Coat with oil.
- Spread potato mixture evenly in the skillet. Let cook, without stirring, until browned, about 5 minutes. Flip and continue cooking until second side is crisp, about 5 minutes more.

TURKEY HASH WITH COUNTRY GRAVY
Steps:
- Heat a large skillet over medium-high heat. Crumble sausage into skillet. Add onions, peppers, and pimientos. Cook 6 to 8 minutes or until sausage is just cooked through, stirring often to break up sausage. Transfer to a large bowl. Clean pan and heat oil.
- Add stuffing, eggs and turkey to bowl with sausage mixture and stir to combine. Add to heated pan and press down with spatula until bottom of skillet is covered with hash. Brown 5 to 7 minutes untouched. Use a spatula to flip over hash and continue to cook another 5 to 7 minutes.
- Meanwhile, take leftover gravy and heat in a saucepan over medium heat. As gravy heats up, whisk in enough milk to thin to desired consistency.
- Serve hash topped with poached egg and warmed turkey country gravy.
MOM'S ROAST BEEF HASH
This was often served on Monday for supper after we had roast beef for Sunday dinner. Mom would extend it with more potatoes if there was not a lot of beef left.

- 1. In large skillet, cook onion and shredded beef in butter until onion is tender crisp and beef is just a bit crispy. Add remaining ingredients except milk and gravy. Whisk milk and gravy together until smooth. Add to skillet. (If there is no leftover gravy, just increase milk to 1 1/2 cups.) Stir all together and bring to a boil.
- 2. Reduce heat and simmer, uncovered, for approximately 20 minutes or until potatoes are done. The liquid should be absorbed. NOTE: If you have leftover potatoes you can use cooked potatoes. Just reduce liquid by 1/2 cup and reduce final cooking time to merely heating the dish completely before serving.
LEFTOVER POT ROAST HASH
This is another way we like to use leftover beef pot roast, potatoes, carrots, and gravy. The onion and cabbage start out raw. Plan your pot roast meal to have extra veggies for this. There is a lot of dicing, so when I was still working I use to dice it up the night before then it was faster when I came home from a long day. Buy shredded cabbage. Pepper and worcestershire sauce really depends upon how your gravy tastes. Top with eggs that you have either poached or fried, I have not included directions for how to fix eggs.

- Heat oil in large skillet over medium heat, stir in cabbage, thyme, and onion, cook for about 5 minutes, stirring often.
- Stir in rest of ingredients, keep burner at medium.
- Press mixture with spatula or put smaller heavy lid on top of, cook 8 minutes or until bottom browns.
- Add small amounts of beef broth IF it looks too dry.
- Start fixing your eggs-either poach or fry.
- Turn over in sections; and it won't be neat-but that is okay- cook for about 8 more minutes, or until bottom browns.
- Plate, sprinkle on parsley.
- Top each portion with 1 egg.

LEFTOVER BEEF HASH WITH GRAVY

- In a large saucepan, cover and cook carrots in boiling water for 5 minutes. Add potatoes and onion cover and cook until tender, about 20 minutes. Add meat and heat through season with salt and pepper. Drain liquid for gravy. Keep vegetable-meat mixture hot. Meanwhile heat leftover gravy, thinning slightly as necessary. (Or use brown gravy mix to stretch amount of gravy on hand. Prepare according to package instructions, using reserved vegetable liquid as thinner.) Serve gravy over hash or blend into mixture.

MARVELOUS LEFTOVER HASH
A great recipe to use up leftover cooked meat and potatoes, or use canned corn beef and omit the salt. Add a couple teaspoons of freshly chopped parsley and Worcestershire sauce for additional flavor if you like. Good served with poached or fried eggs, chili sauce or pickled beets, and rye bread and butter. On a busy day, instead of frying, transfer the hash mixture to a casserole dish and bake it uncovered at 350 degrees Fahrenheit for about 30 minutes or until heated through. Once or twice a week I boil a pot of potatoes with their skins on, cool them and refrigerate. Really handy to have these cooked potatoes, peeled or not, for home fries, omelets, casseroles, and recipes calling for cooked potatoes like this one.

- Coarsely chop cooked meat and potatoes separately.
- Place meat and potatoes in a large bowl. Combine gently.
- Stir in onion, salt, pepper, and milk or evaporated milk.
- Heat vegetable oil in large skillet.
- Spread hash evenly in bottom of skillet.
- Cook, uncovered, over low heat for 30 to 40 minutes or until underside is brown and crusty and the top is heated through. Do not stir. Occasionally lift edge of hash with spatula to check browning.
- Run spatula around edge of browned hash to loosen; fold one half onto the other half.
