HEALTHY BELGIAN WAFFLES (WHOLE WHEAT, FLAX, CHIA)
I used Leah Stacey's recipe for Light N Krispy Belgian Waffles as my inspiration. Just added a few ingredients to contribute to the "healthy" factor. My 9-year old is a HORRIBLE eater, but he loves eating these waffles and doesn't even know how many healthy ingredients I have managed to sneak in there!

Steps:
- 1. Preheat waffle maker.
- 2. Put all ingredients except egg whites in large mixer bowl. Beat on low until moistened. Increase to medium, mix until smooth.
- 3. By hand, gently fold in beaten egg whites.
- 4. Spray the waffle maker with cooking spray. Pour 3/4 cup batter over grids. Close waffle maker, bake until steam no longer escapes, about 3-5 minutes or until your light goes off on your iron. Repeat. Serve hot with your favorite topping.
WHOLE WHEAT AND FLAX WAFFLES
The original recipe was made by my nana for years and years. Then my mom made it for me growing up, and now I make these waffles myself (but with a couple of healthy changes) They still taste just as good as the did when I was a kid. We serve them sometimes for breakfast, but in our family waffles have almost always been served for dinner. When you can't think of anything else to make.

Steps:
- Mix dry ingredients.
- Mix wet ingredients separately.
- Mix dry and wet together whisk until smooth.
- Pour about 3/4 of a cup of batter at a time onto the waffle iron.
- You will begin to see steam coming out of the iron.
- Cook the waffles until the steam is almost gone.
- Any waffles we don't eat right away get put into the freezer, and we pop them in the toaster for a quick breakfast or snack.
HEALTHY MULTIGRAIN CHIA WAFFLES
These waffles are a little bit crunchy and super filling, with ingredients proven to regulate blood sugar. The chia seeds and flax add extra fiber and Omega-3 to your diet. My kids love these waffles with chocolate chips!

- Preheat a waffle iron according to manufacturer's instructions; spray the inside with cooking spray.
- Whisk almond milk, applesauce, egg, chia seeds, and vanilla extract together in a bowl; let sit until chia seeds start to thicken the mixture, about 2 minutes. Whisk flour, oats, flax seed meal, baking powder, sugar, and salt into almond milk mixture until batter is smooth.
- Scoop 1/2 cup batter into the preheated waffle iron and cook until crisp and golden, about 5 minutes per waffle. Repeat with remaining batter.

- Grease a Belgian waffle iron with cooking spray; preheat to medium-high. Whisk together first six ingredients and 1/8 teaspoon salt. In a separate bowl, whisk together eggs, milk, butter and vanilla. Add to flour mixture; stir until just combined. Fold in 3/4 cup cranberries and walnuts., Pour 1/3 cup batter into each quarter of waffle iron, spreading batter to edges. Close; cook until waffle iron stops steaming and waffle is golden brown, about 4 minutes. Repeat with remaining batter., Meanwhile, in a small saucepan, combine maple syrup, granulated sugar, water, remaining cranberries and remaining salt. Bring to a boil; reduce heat, and simmer, 6-8 minutes. Remove from heat; stir in lemon juice. Serve with waffles.

BELLA'S WHOLE WHEAT BELGIAN WAFFLES
A good friend gave me this recipe and it produces a waffle that is more substantial. It's not super light and fluffy like other recipes. They are more like "Eggo" waffles (in terms of texture, not sweetness). Makes 16 (4 1/2" X 4") waffles. When preparing them for freezing, I undercook them slightly, so they don't burn in the toaster.

- Combine flour, sugar, baking powder and salt in a bowl.
- Add milk, eggs and oil to the dry ingredients and mix until combined.
- Use approximately 1/3 cup of batter per waffle.
- Bake on waffle iron as per manufacturers instructions.
- Note: My original posting of this recipe did not include salt. I didn't really miss having salt in this recipe, but I thought the first reviewer of this recipe probably had a point about blandness, so I amended the recipe to include 3/4 teaspoon of salt. Other comments have prompted me to add vanilla to the recipe, with wonderful results. Thanks for your comments!
WHOLE GRAIN WAFFLES
I love experimenting with recipes, and I came up with this one after a lot of experimenting with my favorite waffle recipe. These are more filling than your average waffles. I use aluminum-free baking powder. These are wonderful with homemade blueberry syrup.
