TEX-MEX CHICKEN STRIPS

Steps:
- Preheat oven to 400°. In a shallow bowl mix the first 6 ingredients. Place butter in a separate shallow bowl. Dip chicken in butter, then roll in crumb mixture to coat; press to adhere. Place chicken on a foil-lined 15x10x1-inch baking pan. Bake until a thermometer inserted into the chicken reads 165°, about 15 minutes, turning halfway through the cooking time.

HEALTHY MEXICAN CHICKEN STRIPS
I originally got this idea watching Aaron McCargo on the food network. Of course, his were fried and I am trying to watch my weight. After a few attempts, I have come up with this super easy baked version. I figured out the nutrition facts for four servings, including chips, and it comes out to about 295 calories and 10 grams of fat per serving (approximately 2.5 strips).

Steps:
- Preheat oven 350 degrees Fahrenheit.
- In a food processor, combine cheese, crushed corn chips and taco seasoning.
- Place in a shallow dish (a pie pan works nicely).
- In another shallow dish, combine egg substitute and hot sauce.
- One at a time, dip chicken strips in egg substitute mix; completely coat the chicken strip.
- Completely coat in corn chip mixture.
- Place strips in a 9x13 pan coated with non-stick spray.
- Once all chicken strips are coated and in the pan, spray with more non-stick spray (I use canola oil).
- Bake strips for about 30 minutes or until no longer pink in the middle.

An easy entree with Mexican flair! Serve over rice or buttered noodles.

- Preheat oven to 375 degrees F (190 degrees C).
- Heat a greased skillet to medium. Rub chicken pieces with garlic, salt, pepper and cumin to taste; place in hot skillet. Cook until brown on both sides and no longer pink, 10 to 15 minutes.
- Transfer chicken to 9x13-inch baking dish or casserole dish, top with salsa and cheese, and bake in preheated oven until cheese is bubbly and starts to brown, 15 to 20 minutes.

- Crockpot Mexican Chicken. This recipe is so much more than just shredded chicken. Thanks to the chipotle peppers in adobo, it’s smokey, sweet, and wonderfully spicy.
- Mexican Chicken and Rice. This is best made in a Dutch oven or heavy-bottomed saucepan. The reason is, you’ll want to cook everything in the same pot so you can use all the juices for maximum flavor.
- Mexican Chicken Casserole. Many Mexican or Tex-Mex meals are full of tomatoes, making them fresh and acidic. This recipe, on the other hand, is crazy-creamy and brimming with chicken flavor.
- Skinny Mexican Chicken Skillet. This is the perfect recipe if you want to indulge in Mexican flavors without going overboard on cheese. Loaded with lean chicken breast, corn, and beans, it’s packed with color, terrific texture, and tons of flavor.

- Mexican Chicken Soup. If you have a sniffle or aren’t feeling great, you’ll have to try this fresh and spicy Mexican chicken soup. The peppers will help to clear your airways, and I bet it will brighten you up in no time.
