HEALTHY SOUTHWEST CALZONES

With canned chunk chicken like swansons, it makes it easier to make these calzones, which are so yummy.

Healthy southwest calzones image

Steps:

  • Heat oven to 425. Lightly spray a cookie sheet w/ cooking spray. In bowl, stir together chicken, cream cheese, 1/2 cup salsa and shredded cheese.
  • Unroll dough onto floured surface into a 12" square. Cut dough into 4-6"-squares. Place 1/2 cup chicken mix on 1/2 of each square. Fold dough over filling, pressing edges together to seaal.
  • Place calzones on cookie sheet. Bake 12 min, or until golden. Serve w/ remaining salsa.

1 - 12.5 oz can white chunk chicken in water, drained, flaked
4 ounce(s) reduced-fat cream cheese, softened
1 cup(s) chunky salsa
1 cup(s) reduced-fat, shredded mexican blend cheese
1 - pkg whole wheat pizza dough, refrigerated

Quick and Easy Calzones Recipe image

Steps:

  • Preheat the oven to 400 degrees F.
  • Spray baking sheet with nonstick cooking spray.
  • Roll out the pizza crust, and cut it into 6 equal-sized squares.
  • In the middle of each square, place a portion of the marinara sauce, shredded cheese, and 4 pepperoni slices.
  • Fold the dough over into a triangle, and use a fork to press along the edges of the triangle to seal it closed.
  • Place Calzones onto the prepared baking sheet.
  • Brush the top of each Calzone with butter, then sprinkle with Italian seasoning and grated Parmesan cheese.
  • Place in the oven and bake for 10-12 minutes, or until tops are golden brown.
  • Serve warm with extra pizza sauce for dipping.

  • Preheat oven to 425°. Heat 1 Tbsp. olive oil in a small saucepan over medium heat. Add garlic and cook until fragrant, about 30 seconds. Stir in tomato sauce, Italian seasoning, ½ tsp. salt and ¼ tsp. pepper. Simmer for 15 minutes. Remove from heat. Stir in basil. Set aside.
  • Heat remaining 1 Tbsp. olive oil in a large skillet over medium high. Add ground chuck and cook, breaking into pieces, for 6 minutes, or until browned. Drain. Return meat to the pan. Add mushrooms, onions, pepperoni, and remaining 3/4 tsp. salt and ¼ tsp. pepper. Cook, stirring occasionally, until mushrooms are tender, about 6 minutes. Remove from heat and stir in ¾ cup tomato mixture.
  • Divide dough into 4 pieces, 4 oz. each. Roll each into a 7-inch circle. Spoon ¼ meat mixture (about ½ cup each) and ¼ cup mozzarella on to half of a circle. Moisten edges with lightly beaten egg, fold dough over and crimp to seal edges. Cut 3 small slits in the top. Repeat with remaining ingredients.
  • Transfer calzones to a parchment-lined baking sheet and lightly brush with egg. Bake at 425° for 20 minutes or until golden brown. Serve with remaining tomato mixture.

  • Unwrap and roll on a lightly floured surface into flat disks, about 7 inches wide. Place disks on a baking sheet lined with parchment paper.
  • While dough balls rest, stir together mozzarella cheese, ricotta cheese, egg yolk, lemon zest, grated garlic cloves, kosher salt, and black pepper in a medium bowl with a fork until well incorporated. Divide mixture among dough disks, adding mixture to 1 side of the disk and leaving a 1⁄2-inch border.
  • Lightly beat egg in a small bowl. Brush outside edge of the dough with half of egg; fold into half-moons, and crimp edges with fork. Brush tops of calzones with remaining egg; sprinkle with grated Parmesan and dried Italian seasoning.
