Steps:

  • Mix cabbage and carrots in bowl.
  • Whisk remaining ingredients together in separate bowl.
  • Fold into cabbage mixture.
  • Chill at least 3 hrs.

2 1/2 lbs green cabbage, finely shredded
2 large carrots, approximately 1 cup,finely shredded
1 1/2 cups low-fat mayonnaise
1/2 cup low-fat sour cream
1/2 cup low-fat buttermilk
1/4 cup dijon-style mustard
1/4 cup sugar
1 tablespoon celery seed
1 teaspoon salt
1/2 teaspoon black pepper

My friend Shelly shared this recipe, her aunt Mimi's, at a cookout one summer. It's lighter and healthier than most, and since it is essentially vinegar and oil, it is safe to have on a buffet for hours.

Steps:

  • Place the cabbage, bell pepper, and onion in a large bowl. Sprinkle over the sugar and season with salt and pepper. Set aside.
  • In a small saucepan, combine the oil, vinegar, dry mustard, and celery seed. Season with salt and pepper. Bring to a boil over high heat, then reduce the heat and let simmer for 1 minute. Pour the hot dressing over the cabbage and toss to combine. Cover with plastic wrap and marinate in the refrigerator for 2 hours. To serve, remove from the refrigerator and taste and adjust for seasoning with salt and pepper.

2 tablespoons sugar
Coarse salt and freshly ground black pepper
1/4 cup canola oil

  • To make the dressing, in a small bowl, combine the olive oil with 2 tablespoons lemon juice. Add the garlic, cumin and salt and whisk until thoroughly blended.
  • Drizzle the dressing over the slaw and toss until all of the ingredients are lightly coated in dressing. Taste and add an additional tablespoon of lemon juice if the slaw needs a little more zip. Serve immediately or cover and refrigerate to marinate for up to several hours.
