CRANBERRY NUT BARS

My husband's aunt sent us these bars one Christmas. The fresh cranberry flavor was such a nice change from the usual cookies. I had to have the recipe, and she was gracious enough to provide it.

Cranberry Nut Bars image

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Stir in cranberries and walnuts., Spread into a greased 13-in. x 9-in. baking pan. Bake at 350° for 20-25 minutes or until golden brown. Cool on a wire rack. Cut into bars.

3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped fresh or frozen cranberries
1/2 cup chopped walnuts

DELICIOUS BAKED CRANBERRY & APPLE BREAKFAST

Healthy, gluten free and doesn't take long either. Modified out of Recipe #3806. I serve this with plain yogurt on top.

Delicious Baked Cranberry & Apple Breakfast image

Steps:

  • Preheat oven to 350°F.
  • Combine all ingredients except yogurt and through into a small baking dish.
  • Bake 25 minutes.
  • Serve warm or room temperature with plain yogurt on top.
  • Enjoy!

1 cup granny smith apple, washed, pared and chopped
1 cup frozen fresh cranberries, chopped if wished (I leave mine whole)
1 teaspoon organic grated orange rind
1/2 cup minus 2 tbs dark brown sugar
2 tablespoons butter or 2 tablespoons a little oil
plain yogurt (to serve)

Steps:

  • Preheat oven to 350°. In a large bowl, combine the flour, sugar, baking powder, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. In a small bowl, whisk the egg, orange juice and zest; stir into dry ingredients just until moistened. Fold in cranberries and walnuts. , Spoon batter into a greased and floured 8x4-in. loaf pan. Bake until a toothpick inserted in the center comes out clean, 65-70 minutes. Cool in pan 10 minutes before removing to a wire rack to cool completely.

  • Preheat oven to 375°F and set an oven rack to the middle position. Spray a 9 x 5-inch loaf pan with non-stick cooking spray.
  • In a small bowl, stir together buttermilk, orange zest and juice, melted butter and egg. Set aside.
  • In a large bowl, whisk together flour, sugar, salt, cinnamon, baking powder and baking soda. Stir the liquid ingredients into the dry ingredients with rubber spatula until just moistened. Gently stir in cranberries and nuts. Do not overmix.
  • Scrape the batter into the prepared loaf pan and spread evenly with a rubber spatula. Bake for 20 minutes, then reduce the heat to 350° F. Continue to bake until golden brown and a toothpick inserted into center of the loaf comes out clean, about 45 minutes longer. Cool the loaf in the pan for about 10 minutes, then turn out onto the rack and cool at least 30 minutes before serving.

  • Make Casserole: Melt 1 tablespoon butter in a large skillet over medium heat. Add apples and cook, stirring until the apples are starting to brown and become tender, 4 to 6 minutes. Remove from the heat and stir in cranberries.
  • Whisk eggs in a large bowl. Add yogurt, milk, maple syrup and cinnamon and whisk to combine. Add bread and the apple mixture and stir with a silicone spatula until combined. Transfer to the prepared baking dish. Cover with foil and refrigerate up to 24 hours.
  • Make Streusel Topping: Stir whole-wheat flour, oats, sugar, cinnamon and salt in a medium bowl. Drizzle 3 tablespoons melted butter over the oat mixture, tossing with a fork. Sit until the crumbs are evenly moist. Add nuts and stir to completely combine. Refrigerate separately.
