- In a 5-qt. slow cooker, place parsnips, carrots and onion. Top with beans. Add water, ham, garlic, salt, pepper and hot pepper sauce. Cover and cook on high for 6-7 hours or until beans are tender. , Remove meat and bones from slow cooker. When cool enough to handle, cut meat into bite-sized pieces and return to slow cooker; heat through.

Steps:
- Heat olive oil in a large stock-pot or dutch oven over medium-high heat until the oil begins to shimmer.
- Add onions, celery, carrot, and bell pepper. Cook for 4-5 minutes, stirring occasionally, until vegetables begin to soften.
- Add garlic, salt, and pepper, and continue to cook for an additional 10 minutes until vegetables are soft and the onions are translucent.
- Add cumin, black beans, vegetable stock, and the bay leaf. Bring to a boil then reduce to a simmer.
- Cover the pot and cook over low heat for 30 minutes until the beans are very tender.
- Remove the bay leaf. Transfer about 4 cups (900 g) of the soup to a blender and puree until smooth, being careful not to splatter hot soup all over yourself and kitchen.
- Pour blended soup back into the pot and mix to incorporate.
- Keep over low heat until ready to serve. Garnish with fresh avocado, queso fresco, chopped cilantro, and tortilla chips.
- Enjoy!

- 1. Directions: In a standard Mason jar, layer the bouillon, split peas, pearled barley, lentils, kidney beans, onion flakes, Italian seasoning, rice, bay leaves and pasta. Seal tightly.
- 2. To give as a gift, attach a small card with the following instructions... TO MAKE THE SOUP~~ INGREDIENTS: 1 pound ground beef or chuck roast, cubed 1 teaspoon kosher salt 1/2 teaspoon freshly grated pepper 1/4 teaspoon garlic powder 1 tablespoon olive oil 1 (14.5 ounce) can diced tomatoes 1 (14.5 ounce) can tomato sauce 2 1/2 quarts water 1 batch dry soup mix
- 3. Directions: Pat dry the ground beef or chopped chuck roast, then coat with salt, pepper and garlic powder. Heat olive oil in a large pot over medium-high heat. Add beef and cook until no longer pink, 5-6 minutes. Add diced tomatoes, tomato sauce, water and soup mix. Bring to a boil then reduce heat to low. Cover and simmer for 1 hour, or until the pasta, peas, lentils, beans and barley are tender.
HEARTY NAVY BEAN SOUP

- Rinse and sort beans; soak according to package directions., Drain and rinse beans, discarding liquid. Place in a Dutch oven. Add the tomatoes with juice, onion, ham hock, broth, water, salt and pepper. Bring to a boil. Reduce heat; cover and simmer until beans are tender, about 1-1/2 hours., Add more water if necessary. Remove ham hock and let it stand until cool enough to handle. Remove meat from bone; discard bone. Cut meat into bite-sized pieces; set aside. (For a thicker soup, cool slightly, then puree beans in a food processor or blender and return to pan.) Return ham to soup and heat through. Garnish with parsley if desired.

Classic bean soup recipe. Can be made Italian by adding 3 tablespoons pesto and 1 cup cooked pasta to the finished soup. Can be made Mexican by using black beans, adding 1/2 teaspoon red pepper flakes and 2 teaspoons cumin when tomato paste is added. Can be made chunky by adding diced carrot, potato and shredded cabbage to the veggie list.

- Pour water over navy beans in a large container to cover by several inches; soak 8 hours to overnight.
- Combine soaked beans, chicken broth, water, onion, celery, garlic, and bay leaf in a large pot; bring to a boil. Reduce heat to low and simmer, partially covered, until beans are almost tender, about 1 hour.
- Stir tomato paste and sea salt into bean mixture; simmer soup another 45 minutes. Remove and discard bay leaf.
- Ladle about half the soup into a large bowl; pour soup into a blender, working in batches, filling blender no more than half full. Hold lid down; pulse a few times before leaving on to blend until smooth. Pour pureed soup into pot with unblended soup; stir in parsley and adjust salt and pepper to taste.

- Heat the oven to 400 degrees. Put the squash cubes on a baking sheet, season with salt and pepper, and coat lightly with olive oil. Roast until tender and lightly caramelized, about 20 minutes. Set aside.
- Meanwhile, in a heavy soup pot, heat 2 tablespoons oil over medium-high. Add leeks, salt lightly and let cook, stirring, for about 5 minutes, until softened but still bright green. Remove leeks and set aside to stir into soup later.
- Add a little more oil to the pot, then add the onions. Season with salt and cook until softened, about 5 minutes. Add the chorizo, garlic and red-pepper flakes, and cook for 2 minutes. Add cooked beans and 8 cups water, bean broth or vegetable stock, bring to a simmer, and cook gently for about 30 minutes. Taste and correct seasoning.
- Gently stir in the cooked squash, kale and reserved leeks, and cook for 10 minutes more on low heat. Add a little more broth or water if the potage seems too thick. Check seasoning and adjust as needed.
- To serve, ladle into bowls. Finish with a drizzle of olive oil.

- Combine beans, water, tomatoes, onion, celery, garlic, ham, bouillon, Worcestershire sauce, parsley, garlic, and bay leaf in a stock pot; bring to a boil. Lower heat, cover, and simmer for two hours.

- Rinse beans well, drain, and place in a large stockpot. Add water to cover, top pan with a lid, and allow to soak at room temperature for at least 6 hours or overnight. Alternatively, you can boil the beans on high for 2 minutes, remove the stock pot from the burner, and set it aside for one hour before proceeding with the next step of the recipe.
- Strain the water and replace with fresh water to cover the beans. Add the ham hock and bay leaf to the stockpot, cover, and simmer until the beans are just barely tender, approximately 1-1/2 hours.
- Meanwhile, in a large frying pan, heat the oil and sauté the onions and garlic on medium heat for 2 minutes or until softened. Add the celery and sauté for an additional 3 minutes. Add the tomatoes and carrots; sauté for an additional 10 minutes, stirring occasionally.
- When the beans are tender, add the frying pan contents, chipotle, and vinegar to the stockpot and simmer for an additional 30 to 45 minutes, until vegetables and beans are tender, adding water as needed, to achieve the soup consistency you prefer. Add salt and pepper to taste. Remove the ham hock, scoop soup into serving bowls, and sprinkle with chopped parsley. Serve hot.
