HEARTY OATMEAL PANCAKES

These pancakes are very good and filling. One serving is 3 pancakes. From Taste of Home Guilt Free Cooking cookbook

Hearty Oatmeal Pancakes image

Steps:

  • In a bowl, combine the first seven ingredients. In another bowl, combine the egg, buttermilk, oil and vanilla; mix well. Stir into the dry ingredients just until moistened.
  • Pour batter by 1/4 cupfuls onto a hot griddle coated with cooking spray. Turn when bubbles form on top; cook until the second side is golden brown. Serve with berries if desired.

1 cup quick-cooking oats
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt (I didn't use it)
1 egg, lithly beaten
2 cups buttermilk (I used 1 1/4 cup skim milk and 3/4 cup 2% fat milk with 2 tablespoon vinegar and let it rest 5 minut)
2 tablespoons canola oil
1 teaspoon vanilla extract
assorted berries (optional)

MAPLE PECAN PANCAKES

Instead of using only wheat flour in these pancakes, I've combined whole-wheat flour and almond flour. The almond flour makes for a very moist and delicate pancake. Almond flour is high in vitamin E, calcium, magnesium and copper.

Maple Pecan Pancakes image

Steps:

  • Sift together the flours, baking powder, baking soda and salt
  • In a medium bowl, whisk the eggs. Whisk in the maple syrup, buttermilk, canola oil and vanilla. Quickly whisk in the flour mix. Fold in the pecans and the cranberries. Do not overwork the batter
  • Heat a griddle or a large skillet, either nonstick or seasoned cast iron, over medium-high heat. Brush with butter or oil. Use a 1/4-cup ladle or cup measure to drop 3 to 4 tablespoons of batter per pancake onto your heated pan or griddle. When bubbles break through the pancakes, carefully slide a spatula under them (they are delicate), flip them over and cook for another minute, until they are brown on the other side. Serve right away, or allow to cool and wrap individual servings in plastic, then place in a freezer bag and freeze

Steps:

  • Mix the rolled oats and buttermilk together in a large bowl; allow to soak 15 minutes.
  • Whisk the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt together in a separate large bowl.
  • Beat the eggs and milk together in a separate small bowl; mix into the soaked oats. Stir the flour mixture into the oat mixture. If the batter seems dry, add milk about 1 tablespoon at a time until the desired consistency is achieved.
  • Grease a skillet or griddle and place over medium heat. Ladle about 1/2 cup of batter per pancake onto your preheated cooking surface. Cook until the pancake is lightly golden brown, about 2 minutes, flip, and continue cooking to brown other side, another 1-2 minutes.

Oatmeal Pancakes with Apple Maple Sauce image

Steps:

  • Combine apples, water, and orange juice in a small pot; bring to a boil and reduce heat to medium-low. Stir 1 teaspoon vanilla extract and cinnamon into apple mixture. Simmer, stirring frequently, until apples are light golden and most of the liquid is absorbed, 20 to 25 minutes. Stir maple syrup into apples and reduce heat to low.
  • Beat flour, oats, milk, egg, coconut oil, 2 teaspoons vanilla extract, sucralose, baking powder, and salt together in a bowl until batter is just-combined.
  • Heat a lightly oiled griddle over medium-low heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 5 minutes. Apple Pancakes with Amaretto Pecan Syrup image

Steps:

  • Syrup: Melt butter, add nuts: brown lightly: remove nuts.
  • Add maple syrup, cinnamon and salt to butter in saucepan.
  • Add Amaretto,& apples cover simmer slowly 10 minutes.
  • Remove cover simmer about 3 minutes longer.
  • Remove from heat, add nuts.
  • Replace cover to keep warm while making pancakes.
  • Pancakes: Sift together the dry ingredients.
  • Combine eggs, buttermilk and butter.
  • Fold into dry ingredients.
  • Do not over mix.
  • Coat the apples with cinnamon and cardamom and fold into batter.
  • Cook on hot lightly greased griddle and serve with warm maple syrup.
