HEATH BAR MUFFINS
These are super with softened butter or flavored spreads; try with the other candy bars at least once!

Steps:
- Preheat oven to 400*F.
- Line 12 standard-size muffin cups with paper wrappers; set aside.
- Whisk together the flour, brown sugar, baking powder, and salt.
- In another bowl, stir together the milk, melted butter, egg, and vanilla.
- Make a well in the center of the flour mixture; add the milk mixture and stir just until combined.
- Do not overmix.
- Gently fold in the Heath Bar bits.
- Spoon batter into the prepared muffin cups; bake for 15-20 minutes, or until a toothpick tests out clean.
- Cool 5 minutes in tins before removing to wire racks and cool completely.
- Store airtight at room temperature.

- Grease the bottoms only of 12 standard-size muffin cups, or line with paper liners.
- In a large bowl, beat together the milk, oil and egg.
- Whisk together the flour, sugar, cocoa powder, baking powder, and salt; add to milk mixture just until combined.
- Do not overmix.
- Gently fold in the Heath bars.
- Spoon batter into the prepared muffin tins--the cups will be full; bake for 18-20 minutes, or until a toothpick tests out clean.
- Immediately remove muffins from the tins; serve warm, or cool completely.

- preheat the oven to 350 degrees and line a 12 cup muffin tin with cupcake liners and - if you have two tins - line the second one with 6 liners.
- place the butter, oil, flours, salt and sugars in the bowl of a stand mixer, and using your hands, work the butter and oil into the dry ingredients until crumbly. remove 1/2 cup of this mixture, add the toffee bits and walnuts to it, and set aside.
- place the bowl on the stand mixer, fitted with the paddle attachment, add the egg, yolk, sour cream, baking soda and vanilla paste, and beat on medium-high to high speed for 3 minutes, scraping down the bowl with a rubber spatula periodically, if necessary.
- remove the bowl from the mixer. place a tablespoon and a half of batter in the bottom of each cupcake liner, using a small offset spatula or spoon to make sure the batter evenly covers the bottom of the liner, add a tablespoon and half of the reserved toffee/nut crumb, and another tablespoon and a half of batter. top each muffin with a sprinkling of candy bits.
