HEIDI'S MEATLOAF MISTAKE
This is a deliciously zesty and sweet meatloaf that came to be when I misread a recipe and accidentally added the topping ingredients into the meat itself. Everyone loved it so much that it's the only one I've made ever since!

Steps:
- Mix well ground beef with onion, eggs, bread crumbs, cottage cheese, milk, salt, pepper, worcestershire sauce. Mix dry mustard, brown sugar, nutmeg, and ketchup in another bowl. Pour half of dry mustard mixture into ground beef mixture, and mix well. Pat ground beef mixture into ungreased 9 x 12 baking dish. Spread the other half of the dry mustard mixture on top of meatloaf. Bake at 350 degrees for 1 hour.

Steps:
- Preheat the oven to 325 degrees F.
- Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
- In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

- Preheat oven to 350°. Soak bread in milk for 5 minutes. Drain and discard milk. Stir in next 9 ingredients. Crumble beef over mixture and mix lightly but thoroughly. , Shape into a loaf in a15x10x1-in. baking pan coated with cooking spray. Spread top with ketchup. Bake at 350° until a thermometer inserted in the center reads 160°, 45-55 minutes. Let stand 10 minutes before cutting.Freeze option: Omitting ketchup, bake as directed. Securely wrap cooled meat loaf in foil, then freeze. To use, partially thaw in refrigerator overnight. Unwrap and spread top with ketchup. Reheat on a greased 15x10x1-in. baking pan in a preheated 350° oven until a thermometer inserted in center reads 160°. Let stand 10 minutes before cutting.
