HELEN'S FRIED CHEESE BALLS WITH CHILI MAYONNAISE

These little appetizers remind me of little crab balls, without the crab. The chili mayo is the perfect accompaniment

Helen's Fried Cheese Balls with Chili Mayonnaise image

Steps:

  • To make the cheese balls, cover a cooling rack with three layers of paper towels. In a bowl, mix cheese, bread crumbs, Worcestershire sauce and beaten egg. Roll dough into balls about 1 inch in diameter. Set aside.
  • To make mayonnaise,mix mayonnaise, chili sauce, lemon juice, salt and cayenne pepper in a bowl and mix well.Cover and chill til ready to use.
  • Heat 1 1/2 inches of oil to 375 in a heavy deep flat bottomed pan or electric fryer. Use a slotted spoon to transfer balls, one at a time, onto hot oil. Fry balls in batches of four (to keep oil temperature from dropping) turning once, til both sides are golden brown, about 2 minutes on each side. Remove with slotted spoon to prepared rack. Cover with additional paper towels and allot to drain. Serve at once or keep warm in a 200 oven ti ready to serve. Serve with chili mayo.
  • Tips on Deep frying: Always use an electric fryer following the manufacture's instructions or a deep flat bottomed heavy pot on a level surface. Do not use plastic utensils when frying Use fresh oil every time you fry. Heat oil gradually and in an uncovered pot. The pot should be only half filled with oi to allow for foaming that may occur when items are lowered into it. Use a thermometer to gauge the temperature of the fat at all times. Keep temperature of fat constant. Allow time for the temperature to adjust after each batch. If appropriate, dry items on paper towels before immersing in hot fat. Keep items the same size so they will fry uniformly Don't crowd items in the pan. Have a bowl of ice water handy for spatters and burns. Never leave the frying area unattended Let oil cool completely pan before discarding.

- 1 cup grated sharp cheddar cheese
- 1/2 cup fine bread crumbs (i like panko for this recipe)
- 5 drops worcestershire sauce
- 1 egg, beaten
- vegetable oil for frying
- 1 cup mayonnaise
- 6 tbsp. chili sauce
- 1 tsp. lemon juice
- 1/2 tsp. salt
- 1/2 tsp. cayenne pepper or brined hot chopped peppers

CHEESE BALL III

This cheese ball is one our family has had and used for 20 years. We love it. It's simple, and most of the ingredients are kept on hand. Roll it in nuts or parsley, if desired. Serve with an assortment of crackers.

  • In a medium bowl, blend cream cheese, mayonnaise and lemon juice concentrate. Mix in Cheddar cheese, onion and green olives. Form the mixture into a ball shape. Cover and chill in the refrigerator 3 hours, or until firm, before serving.

Fried Cheese Balls image

Steps:

  • Line a baking sheet with parchment paper or waxed paper.
  • Pour bread crumbs, Parmesan cheese, and Cheddar cheese into 3 separate piles on the prepared baking sheet. Combine milk and egg in a bowl and stir until well combined.
  • Roll cream cheese into 1-inch balls. Split each ball in half and place sharp Cheddar inside of cheese ball; put it back together and shape cream cheese around the Cheddar cheese. Roll it in Parmesan and Cheddar cheeses until the outside is completely covered. Dip in the milk mixture and roll in bread crumbs until completely covered. Repeat with remaining cream cheese balls.
  • Heat oil in a large saucepan to 350 degrees F (175 degrees C). Drop cheese balls in the hot oil and allow to get brown on all sides, 3 to 5 minutes. Drain on paper towels.

Steps:

  • In a medium bowl mix together cheese, shrimp, cilantro, chilies and chili powder. Form into 3/4-inch balls. Set aside.
  • Heat oil in a heavy saucepan or deep fryer to 350-degrees F.
  • Combine flour, cornstarch, baking powder and salt in a pie pan or shallow dish.
  • Make a well in center of flour mixture and add water and 2 tablespoons oil, whisk to combine.
  • In another pie pan pour in breadcrumbs.

  • Mix grated cheese with 1/2 teaspoon chili powder. Take 1 teaspoon of the cheese mix and form a ball.
  • When all cheese balls are done, roll them through flour. Mix egg with water and beat well. Mix the bread crumbs with remaining chili powder. Dip the cheese balls in egg, one at a time, then roll through flour again then back to egg dipping. Lastly roll through bread crumbs and nicely coat the whole ball.
  • When all balls are coated as above, heat oil in a skillet. The oil should cover at least half the balls. Cook the cheese balls until golden, about 3 minutes on each size. Remove on a paper towel. Stick a toothpick so they're easier to grab and serve.
