TOASTED PECAN AND HERBED CHEESE BALL BITES

Steps:
- Preheat oven to 350°F. Spread the nuts onto a cookie sheet and bake for 7 to 8 minutes or until the nuts begin to brown and become aromatic. Remove from oven and let cool. Coarsely chop ¼ cup of pecans; set aside. Finely chop the remaining 1¼ cups of pecans and mix with ¼ cup of chopped parsley in a medium bowl; set aside. Line a cookie sheet with plastic wrap.
- Make the cheese mix: In the bowl of a mixer fitted with the paddle attachment, mix the cream cheese, garlic and fines herbs cheese, goat cheese, salt and hot sauce until smooth. Mix in the remaining ¼ cup parsley, the scallions, pimento peppers and the coarsely chopped pecans. Use a tablespoon measure to transfer tablespoons of the cheese mixture to the prepared cookie sheet to make about 30 mounds. Refrigerate for 15 minutes. Remove the cookie sheet from the refrigerator and roll the mounds into balls. Coat the balls with the reserved pecan and parsley mixture.
- Refrigerate until ready to use. Serve with crackers, crudités or grilled bread, if desired.
HERBED CHEESE CRACKER BITE
A friend gave me this recipe a few years ago and I have been making it for my friends and family since then. I have since seen them on Paula Deen's website. These are so good yet easy to make. The net pic gives you an idea of what they look like.

- 1. Place the crackers in a large sealable container.
- 2. In a bowl mix oil, salad dressing mix, parsley flakes, garlic powder and celery salt. Stir to mix well.
- 3. Pour this mixture over the crackers, cover the container, and gently shake to coat the crackers with the seasonings.
- 4. Refrigerate for at least 24 hours, turning the container every few hours to keep the crackers coated.
- 5. Serve at room temperature.
- 6. Store in a covered container in the refrigerator.

HERBED CHEESE AND CRACKERS
You have to use the Ritz Bitz cheese crackers, not the peanut butter, for this recipe to work well. They have a wonderful flavor and go well with anything or by themselves. It only takes a few minutes of prep time and stores well in an airtight container for several weeks (if they last that long.)

- 1. In an airtight container or large zip lock bag, mix oil, dressing mix and herbs. Mix well. Add Ritz Bitz crackers and toss gently to coat well. Every 15 minutes or so, (3 or 4 times) toss gently until you are sure all are coated well with herb mixture.
