SEEDED-BREAD TARTINES WITH HERBED GOAT CHEESE AND SMOKED SALMON

This open-faced sandwiches make a lovely addition to brunch gatherings.

Seeded-Bread Tartines with Herbed Goat Cheese and Smoked Salmon image

Steps:

  • Mix together goat cheese and herbs and season with pepper.
  • Spread mixture on toast and top with salmon, greens, and onion. Serve with caper berries.

4 ounces soft goat cheese
1/4 cup chopped fresh herbs (parsley, dill, chives, thyme)

8 slices Seeded Bread, toasted
4 ounces smoked salmon
1 cup bitter greens, such as watercress or arugula
1/4 red onion, thinly sliced
1/2 cup caper berries, for serving

Herbed Goat Cheese image

Steps:

  • Find a small, wide-mouth canning jar or small glass vase (3 1/2 inches in diameter by 4 inches high), just large enough to hold the two goat cheeses on top of each other with a little room to spare. Cut each cheese in half horizontally, making 2 rounds from each. (A piece of dental floss makes this easier.)
  • Place half of the first disk flat in the jar, sprinkle with salt and pepper, then with 1/2 teaspoon dill, 1 teaspoon basil, and a few red pepper flakes, and drizzle with 1/2 tablespoon olive oil. Place another disk of cheese on top and repeat the seasonings, herbs, and oil. Continue with the remaining cheese disks, piling one on top of the other with oil and seasonings in between. When all the disks are stacked and seasoned, drizzle 1 tablespoon of olive oil on top. Cover and set aside at room temperature for one hour or refrigerate for up to 24 hours. Serve at room temperature with bread or crackers for people to help themselves.

Steps:

  • Add the goat cheese, basil, garlic powder, onion powder, oregano, salt, thyme and pepper to a stand mixer fitted with the beater attachment. Mix on low speed until you have a smooth, blended paste, about 3 minutes. Scrape down the sides of the mixer bowl and mix again. With the mixer on low speed, slowly pour in the lemon juice and beer; mix until all of the liquid is absorbed. Scrape down the sides of the bowl and mix one last time to ensure all the ingredients are fully incorporated and evenly dispersed.

Steps:

  • Toss beets with balsamic vinegar. Toss frisée with oil, lemon juice, and salt and pepper to taste. Spread goat cheese on baguette, then make open-face sandwiches with toasted walnuts, beets, and frisée.

2 cups drained sliced pickled beets (from a 16-ounce jar)
1 tablespoon balsamic vinegar
4 cups coarsely chopped frisée
2 tablespoons olive oil
1 tablespoon fresh lemon juice
6 ounces herbed soft goat cheese
1 (24-inch) baguette, quartered crosswise, then each quarter halved horizontally and lightly toasted

Steps:

  • On a lightly floured surface with a floured rolling pin roll out dough into a 13-inch round (about 1/8 inch thick) and fit into a 10 or 11-inch round tart pan with a removable rim. Prick dough all over with a fork and chill 30 minutes.
  • Preheat oven to 350°F.
  • Bake tart shell on a baking sheet in middle of oven 10 minutes, or until almost cooked through but still pale.
  • In a food precessor blend cheeses, yolks, flour, and butter until smooth. Stir in chopped herbs and pour filling into tart shell. Bake tart 20 minutes, or until filling is just set. Sprinkle tart with herb leaves and continue baking until filling and crust are pale golden. Cool tart in pan on a rack and remove rim. Serve tart warm or at room temperature.

1 cup cottage cheese
3 large egg yolks
1/4 cup all-purpose flour
1 stick (1/2 cup) unsalted butter, softened
