This recipe has great eye as well as stomach appeal. I like to serve it in a pretty glass bowl.

Creamy Potatoes 'n' Peas image

Steps:

  • Place potatoes in a large pot and cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender. Cook peas according to package directions., Meanwhile, in a small saucepan, saute onion in butter until tender. Stir in the flour, salt and pepper until blended. Gradually stir in milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Add dill. , Drain potatoes and peas; place in a serving bowl. Top with sauce; stir to coat.

Herb Roasted Potatoes with Creamed Peas image

Steps:

  • Preheat oven 425 degrees. Toss potatoes with olive oil, rosemary, thyme, salt and pepper. Transfer to baking sheet and roast until golden 20 to 25 minutes
  • Meanwhile heat butter in saucepan. Add shallots and garlic. Cook until translucent. 5 to 7 minutes. Whisk in the flour and mace. Whisk in half and half. Bring to a simmer and cook until thickened. Add peas and cook through. Stir in dill, lemon, zest and salt and pepper
  • Serve over potatoes

Steps:

  • Place potatoes and bay leaves in a saucean; cover with water.
  • Bring to a boil.
  • Cover and cook for 8 to 10 minutes or just until tender; drain.
  • Cut potatoes into quarters and return to pan.
  • Add butter and seasonings.
  • Cover and cook for 5-8 minutes or until potatoes are tender, stirring occasionally.
  • Stir in peas; heat through.
  • Discard bay leaves.

Steps:

  • Melt the butter in a Dutch oven or large heavy-bottomed pot. Add the whole potatoes, salt, and pepper and toss well. Cover the pot tightly and cook over low heat for 20 to 30 minutes, until the potatoes are just tender when tested with a small knife. From time to time, shake the pot without removing the lid to prevent the bottom potatoes from burning. Turn off the heat and allow the potatoes to steam for another 5 minutes. Don't overcook! Steps:

  • In a small bowl, whisk all dressing ingredients together until well blended. Set aside.
  • Cook potatoes in boiling salted water for about 12 minutes. Drain, let cool to touch, and cut into quarters.
  • Cook fresh peas in salted boiling water for 6 minutes, frozen peas for 3 minutes. Drain under cold water and let cool.
  • In a large bowl, toss still-warm potatoes with about half of dressing and let cool. Combine with peas and bacon and add remaining dressing. Taste and adjust seasoning.
