HMONG RICE PORRIDGE

This isn't the traditional Hmong rice porridge, but close enough! Traditional recipes use Quails or Cornish Hens, chopped up in bite size pieces, but I prefer to make things easier for myself. This is something most parents would give their babies as their first real food when they can eat, or for when you're not feeling well.

Hmong Rice Porridge image

Steps:

  • Add the water or broth of your choice, rice and lemongrass into a pot and bring to a boil. Cook for about 7 minutes on high, stirring constantly to keep the rice from sticking to the bottom of the pot.
  • Reduce the heat to medium-low to simmer, continue to cook until the rice is soft.
  • Put the ground meat into a bowl and add a little bit of warm water to break the meat apart, you don't want it sticking together but in small little clumps.
  • Pour the meat into the porridge and stir. Add a pinch of salt and black pepper to taste. Cook for 10 more minutes or until the meat is no longer pink.
  • Remove the lemongrass and serve warm.

1 quart water (or you can use any broth of your choice)
1 cup jasmine rice, uncooked
1/2 stalk lemongrass
1/2 lb ground meat (you can use ground pork, beef or chicken)
1 pinch salt and black pepper

DANISH CHRISTMAS RICE PORRIDGE

This is a real Danish tradition for Christmas Eve and is served as a first course. When the porridge is almost cooked you make a ceremony, with everyone watching, of dropping one blanched almond in the pot. Whom ever finds the almond in their bowl wins a small present (Chocolate Santa, marzipan figure whatever) The kids love looking for the almond and of course have to eat their porridge in order to find it - no cheating by stirring the poridge in the bowl

Danish Christmas Rice Porridge image

Steps:

  • Bring the milk to a boil in a heavy saucepan.
  • Add rice to the boiling milk, stirring.
  • Lower the heat, cover with a lid and gently cook the rice for about an hour.
  • Be very careful not to scorch the milk.
  • Add salt.
  • Serve the hot porridge with a pat of butter and sprinkle with cinnamon& sugar.

2 pints milk
4 1/2 ounces short-grain rice

KOREAN WALNUT RICE PORRIDGE

This is a traditional Korean breakfast cereal adapted from the California Walnut folks. It's delicious topped with some maple syrup or honey.

Korean Walnut Rice Porridge image

Steps:

  • In blender or food processor, grind walnuts, drained rice and 2 cups of water.
  • Pour blended mixture into a medium sauce pan and add remaining water.
  • Cook, stirring constantly, until mixture boils. Add salt and stir.
  • Serve in bowls garnished with walnuts. Top with maple syrup or honey if desired.

1 cup walnuts
1 cup rice, soaked in water
7 cups water
1/8 teaspoon salt
maple syrup (optional) or honey (optional)

ANCHOVIES RICE PORRIDGE

I had this anchovies rice porridge while I was small, and a lot about half- a year ago when I was pretty sick. A lot of Chinese parents give it to little kids, and sick people. Anchovies have a lot of nutrients, especially calcium. Half a year ago, my grandmother first made it for me, but my dad started making them for me, with other versions of it.

Anchovies Rice Porridge image

Steps:

  • Wash the rice, and soak it for thirty minutes if desired.
  • Steam it, or cook it.
  • Wash the anchovies and add it into the rice, with water.
  • Steam it, and enjoy it when it's done!
  • You'll have to steam it over again if the rice is not soft enough!
  • You could also add a mushroom, chopped up, into it, or beat an egg in before you put it to steam.

SWEDISH RICE PORRIDGE

This recipe comes courtesy of one the American Girls cookbooks. Specifically it comes from the Kirsten one and so is Swedish themed. Several of these recipes from all of the books are all time favorites of mine so I will post them here. Rice porridge, known as "Skansk grot" in Sweden, made pioneer settlers feel at home in America. This is a wonderful comfort food for a sickie or just for a rainy day.

Swedish Rice Porridge image

Steps:

  • Peel and chop apple.
  • Rub butter over bottom and sides of a 3 quart saucepan.
  • Place rice, water, and cinnamon into the saucepan and bring to a boil.
  • Cover and simmer for 10-15 minute or until water has been absorbed.
  • Add milk to saucepan. Heat and stir until simmering but not boiling.
  • Add brown sugar, chopped apple, and raisins and stir gently.
  • Cover pan and allow porridge to simmer for about 45 minute As it cooks, it will thicken. Stir once or twice while it cooks.
  • Turn off heat and remove pan from burner. Remove cinnamon stick and stir in vanilla.
  • Serve warm with cream or honey if desired. Also good saved in fridge and warmed up.

1 large apple
1 teaspoon butter
1 cup white rice
1 cup water
3 inches cinnamon sticks, or

RICE PORRIDGE/RAMADAN PORRIDGE/RICE KANJEE

When I returned back from school with a parched throat, I was always greeted by the aroma of caramelized onion with ginger and garlic paste along with pandan (screw pine) and curry leaves. My mother along with other ladies made porridge in huge pot to donate to the mosque and share with relatives and neighbours during Ramadan. People took turns making the porridge to donate to the mosque so it was always made in big batches. I miss my home now and to relive the memories, I make this dish it at home quite a few times during Ramadan As rice is a staple in Sri Lanka, porridge is usually made with soaked rice, fresh coconut milk and spices. Sometimes moringa leaves/ chicken/ beef is added to make it wholesome. Some opt to add maldive fish chips which is a delicacy in Sri Lanka. Maldive fish is smoked and dried tuna.

Rice Porridge/Ramadan Porridge/Rice Kanjee image

Steps:

  • 1.Wash and soak the rice, fenugreek and broken chickpea (if you are using) in cold water for at least 5-6 hours.
  • 2.Drain the water; in a pressure cooker add the drained rice along with the washed beef or chicken, the garlic, green chillies, a teaspoon of chopped onion and 2 litres of water. Cook for 30 minutes with the weight on. Leave it to cool. Remove the beef or chicken and shred them to small pieces and discard the bones.
  • 3.In a heavy bottomed saucepan, heat oil or butter. When hot, add the cloves, cardamom, cinnamon followed by chopped onion. Cook until the onion turns golden brown; add the ginger & garlic paste along with the curry leaves, pandan leaves and lemongrass. When the ginger and garlic paste turn lightly golden, add the meat curry powder and cook till it is roasted for about 1 minute. Add the tomatoes and cook till tomato becomes mushy. Add the chopped meat and cook for 2-3 minutes.
  • 4.Add the boiled rice and cook till it comes to a boiling point. Add salt and mix well.
  • 5.Add the coconut milk and bring to a slow boil. Adjust the consistency of the porridge to your liking by adding less or more milk. Do not boil. Adjust seasoning to suit your palate.
  • Serve hot.
  • Note: If you are adding maldive fish, add it after the tomato. If you are using moringa leaves, add at the end of cooking as the leaves may change colour.

SPICY MINCED PORK RICE PORRIDGE

Rice porridge is a comfort food to many Asians, especially the Chinese. Mix the porridge with different cooked meats and you get an excellent, savoury mixture. In this recipe, the spicy sauce from the minced pork goes hand-in-hand with the "water" from the porridge, so it tastes like a thick, yummy broth.

Spicy Minced Pork Rice Porridge image

Steps:

  • Cook rice in 1 and a half cups of water until it forms a almost thick texture (a good gauge is that you can still almost make out the grains of rice and the water is slightly thick).
  • Marinate minced pork with chilli sauce, sesami oil and oyster sauce.
  • Add corn flour to the minced pork mixture.
  • Leave for about 20 minutes.
  • Fry shallots in oil until fragrant.
  • Add minced pork and fry until the pork is no longer pink.
  • Add chilli padi.
  • Add half cup of water and the soya bean paste.
  • Continue to fry over a medium flame until half the water is gone.
  • Pour over rice porridge and serve.
