This is the most requested item I bring to the office. It has become the Christmas gift of choice from my kitchen.

Caramel Snack Mix image

Steps:

Preheat oven to 275 degrees F (135 degrees C). Spray a large roasting pan with non-stick cooking spray.
In a medium-size microwave safe bowl, mix butter, white corn syrup and brown sugar. Place the mixture in the microwave and cook 2 minutes, or until butter melts.
Place the cereal, pecans and almonds into the prepared roasting pan. Pour the melted butter mixture over the cereal and nuts and mix gently until the cereal and nuts are coated.
Bake for 1 hour, stirring every 15 minutes.
As the snack mix is cooling, be sure to continue to stir so that the mix will not harden in one big lump.

Steps:

In a large bowl, combine the cereal, pretzels and nuts. In a small saucepan, combine butter and brown sugar. Bring to a boil; cook and stir until thickened, about 2 minutes. Pour over cereal mixture; toss to coat. , Spread into 2 greased 15x10x1-in. baking pans. Bake at 350° for 8 minutes. Stir; bake 6 minutes longer. Transfer to waxed paper-lined baking sheets. Cool completely. Store in airtight containers.

Steps:

Bring to a boil: salt, corn syrup, brown sugar and butter. Boil 1-1/2 minutes. Add 1/2 teaspoons soda.
Pour over the chex cereal in brown paper bag. Microwave 3-1/2 to 4 minutes. Shake bag after each minute. Spread on cookie sheet to cool. Store in covered container.

CARAMEL SNACK ATTACK MIX

I have a house full of picky kids, so I end up with lots of open boxes of cereal. This works with pretty much any cereal you'd want to eat. I've used Kix, Apple Jacks, Rice Krispies, Cheerios, Cocoa Puffs, even Life! I like the stick or mini pretzels the best. I'd bet the big sourdough ones, crushed a bit of course, would be really good too. Please please please be very careful with the boiling syrup. Keep an ice bath nearby in case you spill on yourself. Any seasoned candy maker knows how horrible candy burns are.

Caramel Snack Attack Mix image

Steps:

Place butter, brown sugar and Karo syrup in sauce pot and boil for 6 minutes without stirring.
Combine 4 cups of any combination of ingredients you want in large bowl.
Pour hot butter/sugar/Karo mixture over and mix well.
Spread mixture on waxed paper to cool and break into small chunks.Store in airtight container. Can be frozen.
